and not something from the regular list.

Although if the short ribs were true boneless short ribs,
i.e., rib meat with fat and membrane but minus the bone
(very easy to do), that would be a different issue altogether.
The flavor of the meat is very good, with the advantages of
the chuck and the rib and the disadvantages of the chuck only.

My first real job was culturing white blood cells and other
such for in vitro studies on immune response and also for
reinjection, but that was more science project than anything else.
My first paid job was cleaning toilets for rich kids - that
experience might have made me want to become one of them
(Capitalist pig) or to kill them (Communist revolutionary or
something); it didn't convince me fully in either direction,
and I have tendencies towards both. Mostly I just avoid the
guys except when I'm crooking my pinky at the nobs' club.

As a coincidence, a few days ago DSac picked me up at the airport
in his work-in-progress Ford pickup from before seatbelt days.

When I was just out of school, that was the sale price for round-bone
sirloin, boneless, with .59-69 for bone in. I guess regular was a buck
or so. But being not wealthy I would get chicken drummers for half that
and serve them, one for two people, with rice, sauteed cabbage, and
yogurt-chicken dripping sauce. A meal for two for 50c. I lost weight.

COLLOPS IN THE PAN
cat: main, Scots
serves: 4

2 Tb butter
4 md sliced onions
8 sl rump or fillet steak 1/4" thick
black pepper and salt to taste
1 Tb walnut pickle juice or
- mushroom ketchup or oyster juice

Soften onion slices in butter, push to side of pan, add steak
slices. Brown quickly on both sides, add pepper, mix with onion.
Cover, cook gently for 10 minutes. Remove steaks, keep warm.

Add condiment of choice to pan; correct seasoning. Boil for 1 min,
pour over steaks.
