I don't worry too much about carbs, fat, and salt. Still, I suppose I am eating
healthier than I was a few years ago - mostly because I do smaller portions.
Most of what I bring home are burgers from Rally's/Checkers or a sub from one
of the non-Subway sub shops. Seldom (almost never) pizza. Once in a while some
faux Mex from Taco Gringo.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Taco Gringo Chalupa
 Categories: Beef, Beans, Breads, Cheese, Vegetables
      Yield: 6 servings

  1 1/2 lb Fine grind hamburger
      6    (12") flour tortillas
     28 oz Can refried beans
     
MMMMM------------------------SPICE MIX------------------------------
      1 tb Chilli spice (Mexene)
  1 1/2 ts Cumin; ground
    1/2 ts Coriander; ground
    1/2 ts Cilantro leaves
      1 ts Instant tea powder
    1/2 ts Dry minced parsley
    1/2 ts Black pepper
    1/4 ts Garlic salt
    1/4 ts Onion salt
      1 ts Dry mustard
      1 ts Ground turmeric
      1 ts Sugar
      1 tb Paprika
      1 tb Lawry's seasoned salt

MMMMM------------------------TOPPINGS-------------------------------
           Diced tomatoes
           Shredded lettuce
           Dairy Sour Cream
           Guacamole
           Herdez red or green
           - enchilada sauce in a
           - squeeze bottle
           Shredded cheese of your
           - choice

  Cook the hamburger with the spice mix, breaking up any
  lumps and stirring nearly constantly so that the result is
  as fine-textured as possible. When the meat is done remove
  from direct heat and keep warm.

  In another pan heat the refritos. Keep warm

  Fry the tortillas in neutral oil or lard until nicely
  crisped. Spread each tortilla with a layer of refried
  beans, then with the seasoned beef.

  Shoot some of the enchilada sauce onto the meat and follow
  up with guacamole, the diced tomatoes and shredded lettuce.
  If you have an icing gun, use it to pipe the dairy sour
  cream onto the tomatoes and lettuce. Top it all with
  shredded cheese and some more enchilada sauce.

  This is how I make Chalupas ala Taco Gringo. As near in
  taste/texture as I could get, anyway.
