IIRC, The only thing that makes it possible is the hybridization that
incorporated a mutation which meant that the plant did not produce one
of the enzymes needed to convert the sugar into starch.  This slowed
down the process enough so that it became possible to have sweet corn
more than 4 hours from the field. See this article for details:

MMMMM----- Recipe via Meal-Master (tm) v8.04

      Title: Corn Pudding
 Categories: Side-dish, Vegetables
      Yield: 2 servings

      1    Egg
    1/3 c  Milk, evaporated
    1/2 ts Onion, instant minced
        ds Nutmeg, ground
    1/8 ts Salt
        ds Pepper
      8 oz Corn, whole kernel; drained
      2 ts Butter; melted

  Beat egg; stir in remaining ingredients.  Spoon into 2 greased custard
  cups; cover with aluminum foil.  Place cups in saucepan; add hot
  water to within 1/2 inch of top of cups.

  Bring water to a boil; cover pan with tight-fitting lid, and turn
  heat down as low as possible.  Cook until set, about 17 minutes.  Do
  no disturb during cooking.  Remove cups from pan; place on rack to
  cool slighlty. Unmold to serve.
