Ärende: Tonight's experiment

I have one incredibly huge sweet potato in the crisper drawer. My
usual is to bake it or boil and mash it and then serve it drizzled
with garlicky chipotle butter or bacon fat but I decided to try one
of those sweet baked side dish puddings that show up all over the
Internet every American Thanksgiving. After reviewing a couple of
dozen casseroles, puddings and souffles (all labeled as sides and
not desserts!) I went into the kitchen and winged it. This is what I
came up with, which turned out quite nicely.

I used 1/4 cup of brown sugar and it made a great bedtime snack, but
would use less if it was for a side dish and more as a dessert.

     Title: Orange And Sweet Potato Pudding

      2 c  sweet potato puree
      1 tb butter, melted
      1    egg
      1 tb powdered orange peel
    1/4 ts cinnamon
    1/4 ts nutmeg
    1/4 ts ginger
    1/8 ts cloves
    1/4 c  orange juice
    1/4 c  sweet potato cooking water
           brown sugar * see below
      1 tb flour
           TOPPING:
    1/4 c  crushed walnuts

To make the sweet potato puree, chunk a peeled sweet potato and boil
12-15 minutes in lightly salted water. Drain, reserving some of the
liquid and mash with a potato masher. Then whip the mashed potatoes
into a smooth puree with an electric mixer, adding a little cooking
water as needed.

To make powdered orange peel save well washed orange skins, cut away
the layer of white pith with a sharp knife and air dry the peels.
(These are also great for infusing tea.) Grind them to a fine meal or
coarse powder in a small coffee/spice electric mill. This powder
adds an intense orange flavour to things like cake batters.

Pre-heat the oven to 350 F as the puree cools down. Mix the balance
of the ingredients except the walnuts thoroughly and combine with
the warm puree, then pour into a baking dish lightly sprayed with oil.
Sprinkle the top with finely crushed walnuts. A very quick buzz in
the coffee mill will yield a meal like consistency. Bake at 350 for
30 minutes.

For a side dish for pork add no more than 1/8 c (2 tb) sugar. For a
dessert add 1/2 c.

Optional:

Use pumpkin or squash.

Add a raw chopped apple to the mix.

Add a bit of brandy and triple sec or other orange liqueur to the
mix.
