      Title: Pepper-Crusted Pork Chops W/Roasted Potatoes

      Yield: 5 servings
 
      4    Thick-cut bone-in pork chops
           Kosher salt
      2 ts Fresh ground pepper; + more
           - to taste
      2 lb Baby Yukon gold potatoes;
           - halved
           Olive oil
      1 md Onion; sliced
      2 sm Apples; cored, sliced
      1 lb Radicchio, cored, thick
           - sliced
      1 ts Balsamic vinegar; to taste
 
  Thick-cut bone-in pork chops tend to be hefty so you may
  want to get fewer chops for four servings; they're just
  awkward to split in half.
  
  Preheat the oven to 400øF. Season the pork chops with salt
  and then sprinkle 1/4 teaspoon of pepper on each side of the
  chops; press the pepper in so it stays on the meat.
  
  Place the potatoes in a bowl and toss with salt and pepper
  and enough olive oil to coat, about 2 teaspoons. Spread out
  on a large baking sheet, cut side down.
  
  Heat 1 tablespoon olive oil in a large frying pan over
  medium-high heat. When very hot, add the pork chops without
  crowding (you might need to do this in batches) and sear for
  1-2 minutes per side. Place on baking sheet with the
  potatoes and roast in the oven until the potatoes are tender
  and the pork is cooked through and just barely pink, 20
  minutes. Tent meat with foil and let rest at least 5
  minutes.
  
  Meanwhile, drain all but 1 tablespoon of the oil from the
  pan, then add the onion and saute for 2 minutes. Add the
  apples and saute another 2 minutes. Add the radicchio a
  little at a time until wilted, then season with salt and
  pepper to taste. Cover and cook until very soft and
  darkened, 5 minutes.
  
  Add balsamic vinegar a little at a time until it brings
  together the flavors of the bitter radicchio and sweet
  apples. Serve next to the pork chops, with the potatoes.
  
  Serves 4-6
