I go the opposite direction: 3 or 4 carrots to 1 rib of celery.
There is a beef stew that my mother made once that had lots of
onions and celery but no carrot. I think she ran out of carrots,
actually. Someday I'll maybe try to duplicate it, as the celery-
heavy flavor was intriguing if not my first choice of tastes.

Interesting choice of fish for stew, John Dory and gurnard,
which are quite expensive. I guess when the recipe was
invented, maybe they weren't.

Corny fish stew
cat: main
servings: 4

2 ts olive oil
2/3 c chopped onion
1/4 c chopped celery
1 ts chili powder
1 c frozen whole kernel corn
2 ts Worcestershire sauce
10 oz no-salt-added diced tomatoes, with liquid
10 oz water
10 oz cod, bite size pieces
- (or other lean white fish fillets)
1/4 c chopped parsley
cayenne pepper
salt


Heat oil in a Dutch oven over medium high heat. Add
onion, celery, and chili powder, saute 3 min until tender.

Stir in the corn, Worcestershire sauce, diced
tomatoes, 2 c water; cook for 10 min.

Add the fish, and cook for 3 min or until fish is done.

Taste and add salt and cayenne pepper to taste. Stir in
parsley.
