Oh, I do understand completely.  I'm so very thankful I live so close
to the VA hospital (less than four miles).  When I'd get sick when I
lived in Atlanta, I'd have to drive myself 40 miles each way.  I
remember once when I had a very nasty case of bronchitis coughing so
hard I passed out at the wheel on the Downtown Connector (the five
mile stretch where I-75 and I-85 join together).  I'm lucky I didn't
crash or kill myself with the traffic that was around there!

 RH> I'd leave out the sherry, probably use some balsamic vinegar instead.
 RH> I'd also sub in home made stock for the bullion; it's a lot less salty
 RH> and with the soy sauce, I don't need the extra salt.  Looks good

I didn't read over the recipe too much, but I'd echo your thoughts
about the substitutions.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Focaccia
 Categories: Breads, Herbs, Cheese, Italian
      Yield: 12 servings

  2 3/4 c  All-purpose flour
      1 ts Salt
      1 ts White sugar
      1 tb Active dry yeast
      1 ts Garlic powder
           +=OR=+
      2 tb Chopped garlic
      1 ts Dried oregano
      1 ts Dried thyme
    1/2 ts Dried basil
      1 pn Ground black pepper
      1 tb Oil
      1 c  Water
      2 tb Olive oil
      1 tb Grated Parmesan cheese
      1 c  Mozzarella

  1. In a large bowl, stir together the flour, salt, sugar, yeast,
  garlic powder, oregano, thyme, basil and black pepper. Mix in the
  vegetable oil and water.

  2. When the dough has pulled together, turn it out onto a lightly
  floured surface, and knead until smooth and elastic. Lightly oil a
  large bowl, place the dough in the bowl, and turn to coat with oil.
  Cover with a damp cloth, and let rise in a warm place for 20
  minutes.

  3. Preheat oven to 450 degrees F (230 degrees C). Punch dough down;
  place on greased baking sheet. Pat into a 1/2 inch thick rectangle -
  or whatever shape you like. Brush top with olive oil. Sprinkle with
  Parmesan cheese and mozzarella cheese.

  4. Bake in preheated hearth oven or in an oven on a pizza stone for
  15 minutes, or until golden brown. Serve warm.
