Ärende: Cobb Salad

Yesterday at lunch the Chilli Bunch went to one of the local Steak & Shake
restaurants ... where the burgers are pretty good, the chilli is more than
acceptable and where, if you are armed with coupons the costs are fairly
reasonable. 

One of our companions ordered the fried chicken salad and kept referring to it
as a "Cobb Salad". Well, you guys know me by now, I couldn't let that lay. So I
disputed the Cobb claim and John said "All it lacks is the ham."

That really got my antennae quivering, so when I got home I dug out my recipes
for the Original Cobb Salad (as interpreted by Simply Recipes) and the original
dressing and sent them to him.

So, as long as I had them out anyway ...

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Cobb Salad
 Categories: Salads, Fruits, Pork, Greens, Cheese
      Yield: 4 servings

    1/2    Head romaine
    1/2    Head Boston lettuce
      1 sm Bunch of frisée; (curly
           - endive)
    1/2 bn Watercress; coarse stems
           - discarded *
      6 sl Bacon; cooked, crumbled
      2    Ripe avocados; seeded,
           - peeled, in 1/2" pieces
      1    Chicken breast (abt 3/4 lb)
           - skinned, boned, halved,
           - cooked, diced
      1 lg Ripe tomato; seeded, chopped
           - fine
      2 lg Hard-boiled large eggs;
           - separated, yolk finely
           - chopped and the white
           - finely chopped
      2 tb Chopped fresh chives
    1/2 c  Fine grated Roquefort or
           - bleu cheese

MMMMM-------------------------DRESSING------------------------------
    1/3 c  Red-wine vinegar
      1 tb Dijon-style mustard
      2 ts Sugar
           Salt & pepper
    2/3 c  Olive oil

  * All lettuces should be rinsed, spun or patted dry, and
  coarsely chopped

  Cook the bacon in a skillet on medium heat until crisp on
  both sides. Remove from skillet and lay out on paper
  towels to absorb the excess fat. Allow the bacon to cool.
  Crumble the bacon and set aside.

  In a large salad bowl, toss together well the various
  lettuces and watercress.

  Compose the salad. Arrange the chicken, the bacon, the
  tomato, and the avocado decoratively over the greens and
  garnish the salad with the grated egg and the chives.

  In a small bowl whisk together the vinegar, the mustard,
  and salt and pepper to taste, add the oil in a slow
  stream, whisking, and whisk the dressing until it is
  emulsified. Stir in the Roquefort. Add sugar to taste, 1/2
  teaspoon at a time. Whisk the dressing. Serve separately
  or toss in with the salad.

  Yield: Serves 4.

Or, use this alternative dressing. Either will work well.

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Original Cobb Salad Dressing
 Categories: Salads, Dressings, Citrus
      Yield: 1 1/2 cups

    1/4 c  Water
    1/4 c  Red wine vinegar
    1/4 ts Sugar
      1 ts Fresh squeezed lemon juice
      2 ts Salt
    3/4 ts Fresh ground black pepper
    3/4 ts Worcestershire sauce
    1/4 ts Dry English mustard;
           - (Colman's)
      1 sm Clove garlic; fine minced
    1/4 c  Fruity, full-flavoured olive
           - oil
    3/4 c  Salad (Mazola) oil

  Blend all ingredients together, except oils. Add olive
  and salad oils. Mix well.

  Blend well again before mixing with salad.

  Makes 1 1/2 cups
