Ärende: GOING TO PETALUMA 316
=============================
GJ> In the 19th century 60 could have been considered a "good long life",
ML> And now it's a bad short one? Maybe: all the talk at the
ML> funeral was how untimely was his death.
GJ> Definitely. Most people who die young do so violently.

Depends on what you mean. From birth to the mid-40s accidents
(mostly automobile accidents) are the most frequent cause of
death; after 45, cancer and heart disease are 1 and 2, heart
disease taking over as champ at 65. Accidents are violent,
but when one sees the term, one thinks of murder and to a
lesser extent suicide as death by violence.

As most of our current experience is in peacetime and reasonably
civilized places, you are overstating things a bit. Here are the
rankings of the top 10 causes of death in the US in 2008, the most
recent year for which the statistics have been released by the
National Vital Statistics System of our CDC.

15-24 - accident about 50%; homicide and suicide around 20%
each, more homicides than suicides; followed by cancer, heart
disease, congenital anomalies, influenza and pneumonia, diabetes,
stroke, complications of pregnancy

25-34 - accident 42%; suicide about 16%; homicide about 13%;
followed by cancer, heart disease, HIV, diabetes, stroke, liver
disease, congenital anomalies

35-44 - accident about 25%; cancer and heart disease in the
15-20% range; suicide about 11%; homicide 5%; then HIV, liver
disease, stroke, diabetes, septicemia

45-54 - cancer, heart disease, accident, suicide, liver
disease, stroke, diabetes, lung disease, HIV, hepatitis

55-64 - cancer, heart disease, lung disease, accident,
diabetes, stroke, liver disease, suicide, kidney disease,
septicemia.

BRAISED SQUIRREL WITH CANTERBURY SAUCE
servings: 4

3 squirrels, quartered
1 c flour
1 ts salt
1 ts pepper
2 Tb butter
2 Tb bacon grease
1 Tb olive or vegetable oil
1 lg yellow onion, coarsely chopped
2 garlic cloves, minced
3 c whole mushrooms (smaller is better)
2 md carrots, peeled and cut into 2" pieces
3 celery stalks, trimmed and cut into 2" pieces
1/4 lb cooked bacon (pre-cooked weight)
1/4 c chicken stock
1 1/4 c dry red wine
2 Tb fresh parsley, chopped
1 ts Italian seasoning
3 Tb tomato paste
salt and pepper

Combine flour, salt, and pepper in a bowl. Dust
squirrel pieces with the seasoned flour. Heat a
large frying pan and melt the butter and bacon
grease. Lightly brown the squirrel pieces evenly
on all sides and transfer to a lightly greased
casserole or baking dish. In another skillet (or
clean the first one!), heat oil over medium heat
and add onion, garlic, mushrooms, celery, carrots,
and cooked bacon. Cook until onions are translucent
and not browned. Add chicken stock, wine, parsley,
Italian seasoning, and tomato paste, stirring over
heat until the tomato paste dissolves. Pour over
squirrel in the casserole dish. Cover and place in
an oven at 325F for 2 - 3 hr or until meat begins
to pull away easily from the bone. Turn squirrel
pieces every 45 min or so. Correct seasoning.

Note: 1 large chicken or 2 smalls may be
substituted, or in fact just about any meat.
