Depends where and with whom you studied. The rule that
obtained at the first or second place I had articles
published was the one that stuck with me: all possessives
end in 's except for Jesus' and Moses' - of course there
are those who would elevate Popeyes to that level.

The English way as I recall would have you use apostrophe
no s after nouns ending in s or x, as in "the oryx' horns."

Heavy Onion Gravy, Lattermann Style
Categories: Thai, German, sauce
servings: 4

wheat flour
cooking oil
250 ml milk
1 big onion
2 to 3 garlic cloves
2 eggs
Maggi/Knorr chicken broth cube
Thai fish sauce
1 or 2 red-hot chilies (fresh or dried)
black-pepper powder
black/white pepper corns

Peel the onion and the garlic cloves. Cut the peeled
onion into small slices. Put cooking oil into a pan and
heat it up. Once the oil is heated up. Put the onion
slices into the hot oil. In the meantime cut the two to
three garlic cloves into small pieces. While cutting the
garlic cloves, don't forget to stir the onion slices.
Add the cut garlic pieces to the onions in the pan, mix
and stir regularly. Take care that the lower layer of
onions does not turn black.

Once the water from the onions and garlic has mostly
evaporated and the onion slices and garlic pieces have
turned into golden-yellowish color, remove them from the
frying pan, and keep them in a small bowl. When removing
the onion/garlic, please leave the oil in the pan, as we
need it later.

Now take a pan and insert the residual oil from the
previous process. If the residual oil is not enough, add
fresh cooking oil, as desired. Heat up the oil, and
insert three heaped big spoons of flour powder.
Mix until you have an even mixture of oil and flour.
Heat it on the cooker at maximum heat, continuously
stirring. Carefully add milk, while stirring, and
continue adding milk while stirring, when the
mixture tends to become solid. Keep the mixture hot,
but don't let it burn to the bottom of the pot.
Once the milk is finished, continue stirring, while
adding the prepared 250 ml of water. Mix the dough
quickly with the added water. Before the mixture starts
boiling again, add the Maggi-broth cube, add Thai fish
sauce, as desired. Add the two raw eggs while
constantly stirring. When the gravy has become of
uniform consistency, you may add some black-pepper
powder, as desired. Mix and stir everything well, and
always remember to ensure that the gravy does not stick
to the bottom of the pot. In order to enhance the taste
of the gravy, depending on the purpose of the gravy, I
recommend adding the following recipe:

Put one or two red-hot chilies into the cup of an
electric blender/mixer. Add black and/or white pepper
corns, as desired. Also add approx. 1/3 of the fried
onions we have prepared before.

The gravy may finally be used for a chicken, pork,
mushroom, etc. dish, so take a couple of small cubes
of fried chicken, pork or mushroom, etc. Add them into
the blender/mixer cup. Add some oil and/or water before
starting the mixing procedure. After starting the mixing
process, please ensure that there is sufficient water/oil
added in order to achieve a smooth paste-like consistency
of the chili / fried-meet / onion / mushroom / pepper
mixture. In case the consistency of the paste generated
is too thick, please make sure that the electrical motor
of the blender/mixer will not be overheated. If necessary,
stop the process and add more water/oil to the paste.

After the blending/mixing is completed (no more knocking
noise from the blender, let the paste settle for a moment,
and then remove the cup from the motor base. Add the
remaining fried onions and the prepared paste from the
electric blender/mixer to the sauce, and stir continuously.
Add pepper and/or Maggi Seasoning to the gravy as desired.
Once finished, the gravy should not be too sticky and not
too liquid. If necessary, add additional water until the
mixture becomes of a creamy consistency. Remove the sauce
from the cooker, but continue stirring from time to time,
and then transfer the gravy to a bowl for serving.
