That fits with what I remember being said on the smoker's meat forum
(when I was reading it regularly some time ago).  I.e. a way of
preparing the slab of ribs.  But Ruth seems to have been using it more
as a type of cooking or as a particular type of spices -- in contrast to
Memphis style dry rub.

Personally, If I am doing spare ribs, I'd prefer doing the whole rib
slab.  The trimming to St. Louis style cuts off a lot of good meat:-}}

The ribs being served at the place I was talking about in Laurel were
what are called baby back ribs -- which are naturally rectangular in
shape.

      Title: Chili Short Ribs
 Categories: Beef, Crockpot
      Yield: 4 servings
 
      3 lb Short ribs
      1 tb Vegetable oil
      2    Garlic cloves
      2 ts Chili powder
     15 oz Tomato sauce
    1/2 ts Salt
      1 ts Pepper
      1    Onion
     32 oz Red kidney beans
 
  Brown ribs in hot oil.  Remove, drain all but 1 tsp fat.  Add chopped
  garlic, lightly brown in oil.  Add chili powder, tomato sauce, bring
  to simmer.  Sprinkle ribs with salt and pepper put in crockpot.  Add
  sauce and sliced onion.  Cover and slow cook 6 to 8 hours on low.
  Remove bones from pot, add kidney beans, cover and cook on high 1
  hour.
  
  Serve with cornbread.
