Probably no more than it did on me. My parents, thankfully, did not follow the
practice of my maternal grandmother, a small-town, Midwestern church lady if
ever there was one. She was a controlling old witch to the day she died -
always trying to force others into her pre-conceived niches. And I was always
the square peg. So, we had some memorable clashes. Bv)=

I discovered, after I got out on my own and away from my grandmother's (even
indirect) influence that I quite like cooked spinach ... it was always served
with vinegar applied - because that was "the way that it's done" at my
grandparent's house. My mother didn't care for it that way and never made it at
our house.

On my own I discovered that if you leave the vinegar off and add a little salt
and maybe some butter if it has turned bitter - it's really quite nice as a
side dish.

      Title: Tomato Florentine Soup
 Categories: Soups, Greens, Chilies, Poultry, Cheese
      Yield: 9 servings

    1/2 c  Chopped shallots
      2 tb Extra-virgin olive oil
    1/4 c  Chopped garlic
    1/4 ts Red pepper flakes
    1/4 c  Dry white wine
      2 cn (28 0z ea) whole tomatoes in
           - juice
      2 c Chicken broth or water
    1/4 c  Fresh basil leaves
      3 tb Sugar
      2 ts Balsamic vinegar
      5 oz Bag fresh baby spinach;
           - chopped
           Salt and pepper
           Croutons
           Crumbled blue cheese

  There's nothing better than tomato soup on a chilly day. You
  could open a can, but after trying this recipe, you may
  never walk down the soup aisle again!

  Sweat shallots in oil in a large pot over medium heat until
  soft, about 5 minutes. Stir in garlic and pepper flakes;
  cook 1 minute.

  Deglaze pan with wine; simmer until nearly evaporated. Add
  tomatoes, broth, and basil. Increase heat to medium-high;
  bring mixture to a boil. Reduce heat to medium-low and
  simmer soup for 10 minutes. Purée soup with a hand blender
  (or in batches in a standard blender) until smooth. Return
  soup to the pot and bring it to a simmer.

  Stir in sugar and vinegar. Just before serving, stir in
  spinach; season with salt and pepper. Garnish soup with
  croutons and blue cheese.

  Editor's Note: Pre-washed bagged spinach is a great
  convenience, but it's a good idea to give the leaves a quick
  rinse before using to reduce the chance of contamination.
  Bunch spinach always needs a thorough washing - it's
  typically very sandy.

  Makes: 9 cups
