Just the way the market demand increased over the years. At one time,
mediums were the baking standard, larges were the top of the line in
eggs offered for sale. Now you can find XL and Jumbo. Guess that goes
along with the increase in portion sizes we've seen over the last 20+/-
years.

More yolk in proportion to white but acceptable ratio probably depends
on your definition.

I generally don't use used bones. I do, for veggie stock, use less than
prime veggies but nothing moldy or anything like that. Onion skins,
wilted celery, and such like are fine for that. Steve commented the last
time I made it, that it smelled good enough to eat. He took a look at
the pot and decided that he didn't want to. (G) That stock went into the
brine for the last turkey he smoked.
