Actually I know You did Chat with me here.. You'll have to forgive me
though. Even though I run the BBS and enjoy the echos, I don't always
get on or into the echos as often as I'd like. I also find that I don't
fire up Blue wave as much. A bit of a hassle with my hardware. ( doesn't
go to full screen ) I gave up my old favorite bbs software, which made
posting messages as easy as it gets, but again it is old and the
hardware/software conflicts exist. All that babble and it boils down to
with certain life things going on and the previous babble, I just don't
get on as much as I would like to in the msging area. The reason I
remember, I remember You mentioning Newark. BTW, My job takes me through
there every so often. Has that place grown since I was last there,
probably in the 60's. You guys have all kinds of stuff out there now! I
am trying to be on a bit more now, so I am sure we'll get to know each
other. I will be like a manic depressive, here for a few, gone for a
few and then back again. Just depends on when I can find the time. I do
enjoy this echo though. Will catch ya soon!

Egg Noodle - And - Cottage - Cheese Casserole
(Lokshyna)

What You Need:
8 slices lean bacon
3 cups cooked and drained egg noodles, or a good commercial variety
1« teaspoons salt
2 cups large-curd cottage cheese
2 eggs
¬ cup heavy cream
4 tablespoons unsalted butter
« cup fine dry bread crumbs

How To Cook:
1. Fry the bacon in a 10- to 12-inch skillet until brown and crisp.
Crumble it coarsely and combine it with its fat in a large mixing bowl.

2. Add the cooked noodles, sprinkle with « teaspoon of the salt, and
with two forks, toss together thoroughly. Place the cheese in a separate
mixing bowl and beat in the eggs, the cream and the remaining teaspoon
of salt.

3. Preheat the oven to 350øF. With a pastry brush, lightly coat the
bottom and sides of a 1« - to 2-quartbaking dish with 1 tablespoon of
the butter.

4. Spread a layer of the noodles in the bottom of the dish. Top with
half the cheese mixture, then repeat the layers, ending with a layer of
noodles.

5. Melt the remaining 3 tablespoons of butter in a 10- to 12-inch
skillet. Off the heat, stir the bread crumbs into the melted butter,
then scatter the buttered crumbs over the top of the noodles.

6. Bake in the center of the oven for about 30 minutes, or until the
crumbs are golden brown. Serve at once.

Walk 2 hours to burn off some of the calories <grin>
