In peasant class seats, flight attendants are not handy at all times.
In fact they are like policemen, never around when you need one.

Some of my travelling companions have whined to me about the tropical
heat and humidity when walking around Singapore, but I don't mind it.
To shut them up I have to take them into an airconditioned bar or
coffee shop.  My usual hotel in Bugis is in Waterloo St, between the
Hindu and Taoist temples, and handily only a block away from the main
fresh durian and mangosteen shops.  There is often some form of
festival or celebration going on in Waterloo, or if bored, you can sit
and have the little fish nibble your toes.

On the buses you have to remember to swipe your card when you get off,
as well as when you get on.  Some of my Filipino family found it
difficult to remember to do that.  (The same ones who lounged across
the escalators, blocking the speed traffic.)

      Title: Parmesan Ice Cream Sandwich
 Categories: Dessert, Ice cream
      Yield: 12 servings
 
MMMMM---------------------FOR THE ICE CREAM--------------------------
      5 c  Heavy cream
    1/2 lb Finely grated Parmesan
           -cheese

MMMMM---------------------FOR THE MARMALADE--------------------------
      5    Lemons
      1 c  Sugar

MMMMM-----------------------FOR THE COOKIE----------------------------
      5 lg Egg whites
    1/2 lb Finely grated Parmesan
           -cheese
           -Nonstick cooking spray
 
  To make the Ice cream -- Bring cream to a simmer and gradually add
  Parmesan, stirring until mixture is smooth, about 10 min. Strain
  through a fine strainer, and press on any solids to extract as much
  liquid as possible. Cool to room temperature. Pour mixture into a 9 x
  12" baking dish, cover with plastic wrap, and freeze until solid,
  about 6 hr.
  
  Then to make the marmalade -- Remove all peel and white pith from
  lemons. Dice lemons into 1/2" cubes. Simmer with sugar over
  medium-low heat until mixture is thick, about 1 hr, stirring. Let
  cool to room temperature.
  
  Next make the cookies -- Oven at 350F. Combine egg whites and grated
  cheese. Spray two 10 x 15" nonstick baking sheets with cooking spray.
  Spread half of mixture in center of each sheet. Top with a sheet of
  wax paper, and use a rolling pin to press mixture evenly across each
  pan. Remove and discard wax paper. Bake mixture until lightly
  browned, about 7 min. Remove pans from oven, and trim dark edges. Cut
  remaining mixture in in each pan into 12 3" squares to make a total
  of 24. Using a spatula, turn the squares over, and return pan to
  oven. Bake an additional 5 min, and remove pan from heat.
  
  And finally -- To assemble: Remove ice cream from freezer, and place
  on top of a warm damp cloth for 5 min. Using a knife dipped in hot
  water, cut ice cream into 12 3" squares. Place each square on a
  Parmesan cookie, add a spoonful of marmalade, and top with another
  Parmesan cookie. Serve immediately, or place in freezer until serving.
