      Title: Seared Chicken Breasts W/Dandelion Greens & Roasted Potat
 Categories: Poultry, Greens, Potatoes, Citrus
      Yield: 4 servings
 
      1 lb Small new potatoes; 2"
           - diameter, halved
      2 tb Olive oil
           Kosher salt & pepper
      4    Chicken breasts; boned,
           - skinned
      2 cl Garlic; thin sliced
      2 bn Dandelion greens *; washed,
           - bottom stems removed
      2 ts Lemon juice; as needed
 
  Preheat the oven to 375øF. In a medium bowl, toss the
  potatoes with olive oil and salt and pepper, then spread out
  cut side down on a large baking sheet. When the oven is
  preheated, place them in the oven and cook for 20 minutes,
  or until crisp and starting to be cooked through in the
  center.
  
  Meanwhile, season the chicken with salt and pepper on both
  sides.
  
  Heat a large frying pan, then add enough olive oil to coat
  the bottom thoroughly. When the oil is hot, add the chicken
  and sear on each side for 4 minutes.
  
  Remove the potatoes from the oven briefly, stir and make
  room for the chicken, cooked side up. Return the chicken and
  potatoes to the oven and continue cooking for another 10
  minutes.
  
  Remove the potatoes and chicken to a plate. Drain all but 1
  tablespoon of fat from the pan. Add the garlic, cook until
  fragrant, about 30 seconds, then add the dandelion greens in
  batches. Season lightly with salt and pepper to taste and
  stir to wilt the greens as you add more.
  
  Adjust seasoning of the greens, adding lemon juice and salt
  and pepper if needed. Serve on plates topped with the
  chicken and surrounded by the potatoes.
  
  * Note: If you can't find dandelion greens, substitute Swiss
  chard leaves removed of their stems.
  
  Serves 4
