Culinary influences:

An archipelago of 115 islands in the Indian Ocean, some 1,500
kilometres east of mainland Africa, northeast of the island of
Madagascar. Other nearby island countries include Zanzibar and
Mauritius

History: Austronesian seafarers, and later Maldivian and Arab
traders were the first to visit the uninhabited Seychelles. In the
colonial era, the French took control, then the British.

Geography: coral islands, dense forests, humid tropical climate

Economy: During the plantation era, cinnamon, vanilla, and copra
were the chief exports. The prime agricultural products today
include sweet potatoes, vanilla, coconuts, and cinnamon. Frozen and
canned fish, copra, cinnamon, and vanilla are the main export
commodities of the islands.

Demographics: French, African, Indian, Chinese. Most people are of
African origin, often mixed with European or Asian heritage. Plus
Turkish and Arabic minorities.

Flora and fauna of note: giant tortoise, the Coco de mer, a species
of palm, freshwater crab, large seabird colonies.

The cuisine is a mix of world cuisines. Abundance of fish: as curry,
fillets, raw fish with lemon, grilled, steamed. Fried octopus,
lobsters with garlic, bat curry.

Palm wine

Shark chutney is a dish eaten in the Seychelles. It typically
consists of of boiled skinned shark, finely mashed, and cooked with
squeezed bilimbi juice and lime. This in turn is mixed with onion,
pepper, salt and turmeric. The onion is fried and it is cooked in
oil.

chicken, pork, cinnamon, vegetables, coconuts, bananas, tea, milk,
beef, tomatoes, pineapples, goat, other Fruit, other eggs, cassava,
avocados, duck, lemons and limes.)

It is a fruit-bearing tree of the genus Averrhoa, family
Oxalidaceae. It is a close relative of the carambola, originating on
the Moluccas, Indonesia. Now cultivated or found semi-wild
throughout Indonesia, The Philippines, Sri Lanka, Bangladesh, Burma
and Malaysia. It is common in other Southeast Asian countries:
India, Zanzibar, Jamaica, Central and South America where it is
known as mimbro and Queensland, Australia.

The fruit is eaten either raw or dipped in rock salt (or other
savoury powders - masala), as a snack. It could either be curried or
added as flavoring for the common Filipino dish sinigang. The
uncooked bilimbi is prepared as relish and served with rice and
beans in Costa Rica. In the Far East, where the tree originated, it
is sometimes added to curry. Bilimbi juice is made into a cooling
beverage. In Indonesia, it is added to some dishes, substituting for
tamarind or tomato.

Additionally, the fruit can be preserved by pickling, which reduces
its acidity. The flowers are also sometimes preserved in sugar.

It is preserved by sun-drying, the sun-dried bilimbi is called asam
sunti.

It can replace mango in making chutney.

In Malaysia, it also is made into a rather sweet jam.

In Kerala, India, it is used for making pickles.
