I take my cue from flight crews, who almost invariably
tip, even when they're wearing the livery of a foreign
carrier. Of course, they are likely to be remembered,
because of the frequency of their encounters with the
drivers and bellhops. Of course, so am I. When I started
this game, 25c was a standard tip; then there was this
vast amount of time when 25c was a puny slap on the palm,
and a buck was way too much; now $1 seems to be standard
for zero to one bag, plus a buck for additional bags.
Flight crews always tip a buck and seldom need help with
their bags.

There's a public bus I take semi-regularly whose timetable
states that the drivers are required to help passengers with
their bags, on request. Recently, I saw some people tipping
the driver. A peculiar thing even to me, where public servants
are public servants, if you will.

How about sea cucumbers and bananas? I'm not sure that genes
are more relevant than color, length, shape, and so on.

Some appear to be further along than that, 'tis true.

Of course, there's some question as to whether popular and
frequently stolen is a good thing.

And there would be the interesting sidelight of determining who
packaged stuff to be deceiving, and the direction of the deception.
I'd guess 25-25-50, in order of cheaper than expected, no deception,
and better than expected (I think most people do like to see other
people gratified, none of this schadenfreude stuff).

Canneles
Cat: dessert
Serves: 4 to 6

4 1/4 c whole milk
1 vanilla bean, seeds scraped out (pod discarded)
8 Tb butter
4 whole eggs, plus 4 yolks
2 1/2 c granulated sugar
1/2 c flour
7 Tb rum
1/2 ts salt

In a saucepan, combine 3 c milk, the vanilla seeds, and
7 Tb of the butter. Cook the mixture over medium heat,
and turn off the burner when the mixture reaches 185F.
Carefully monitor the temperature with a thermometer.

In a separate bowl, mix the rest of the milk, the eggs,
yolks, sugar, flour, rum, and salt.

Cream the two mixtures together until smooth. Refrigerate
24 hr.

Using the remaining butter, generously grease the molds.
Fill each mold 2/3 of the way up. Depending on the size
of your molds, this will make about a dozen.

Preheat the oven to 400F, and bake the canneles 1 hr.
Remove from the molds by turning the pans upside down onto
a cooling rack. Eat them the same day for best flavor.

Molds for cannelés are available at most kitchen-supply stores.
