DD> celebration of newly found prosperity by recent immigrants.
DD> From eating meat once a week or less
 > Dave D did refer to "recent immigrants".

JW> I think he was referring to the 19th and early 20th century period of
 JW> mass immigration there.

He has now revealed that he was referring to mid-20th century, which
would make the migrants escapees from the Soviet Republics.

GJ> Re the "once a week", Joan told me that she spoke to a recently
GJ> arrived Polish migrant about that, and was told that, "Yes, it
GJ> is true we could only afford meat once a week. The rest of the
GJ> time we had to make do with chicken."

 JW> More recent!

About the same, I guessed. Now the inhabitants of Eastern European
countries do not have the motivation to escape the rigors of poverty,
as conditions there are good, thanks to non-involvement in Western
banks and the associated economic melt-down. The main sources of
the many economic migrants and refugees arriving in my suburb, and
presumably other parts of the world are now South Asia and North
Africa. This has led to a great increase in the range of foods
available in the little shops that have sprung up in the
neighbourhood. My recently visiting Indian born son-in-law was amazed
to find spices that he can't get in Darwin; in particular black
cardamom, which has a very different flavour from the green version.
He had not seen that since he left India as a teenager.

JW> Read James Michener's "Poland" to get a feel for
JW> peasant life in past centuries. The passage describing a farmer
JW> lovingly making a kielbasa for a once a year meat dish at Easter
JW> will make you very hungry!

I have some sauerkraut and kielbasa ready to make bigos when I have
finished the left-overs left over by the visiting Darwin mob.

JW> consider how modern American pizza toppings are so much thicker
JW> and meatier than the old fashioned Italian ones they are based on.
 > But not necessarily better than the old ones.
JW> I like both styles. The former is a meal, the latter a flavoured
 JW> bread.

They are made with different intent, so I would not consider economics
to be mainly responsible for the development of the "with the lot"
American version. Many people still make and enjoy the thin version.

JW> tips where they work so I get lots of extra sweet smiles from sweet
 JW> young things.
 > Do you tip those sweet young things just as much when Roslind is with
 > you?

JW> Yep, and she is a more generous tipper than I am having once worked
JW> in the service industry herself a long time ago.

My Darwin daughter worked for quite a while in the Japanese restaurant
in the local Hyatt (now Intercontinental) Hotel, which had a lot of
American guests who insisted on tipping waiters. At the end of each
day all those tips were pooled and equally shared by waiters,
supervisor and kitchen staff.

In your country, if you think the cook has produced an outstanding
dish, and should be thanked in some way, how do you do it? Do you
just ask the waiter to pass on your comments, or do you send him/her a
tip via the waiter, or do you go into the kitchen to thank him.

If you are considering adding to your cellar, the vignerons of
MacLaren Vale are happy to advise that this year, although the
quantity is down compared with previous years, the quality is the
highest for 20 years.
