Everything is a compromise, including safety.  No transport is 100%
safe, as indicated by the regular crashes of flying machines, ships,
cars and bicycles.  The first requirement of an aircraft is that it
should fly and carry a revenue-earning load of passengers and/or
cargo.  The Russian Concordski failed to meet that specification.
Safety is very important, but when you read that vital structural
components of most modern aircraft have to be inspected regularly and
if cracks exceed the allowable size, the bits have to be replaced,
that may give cause for worry.

One of the interesting features of metals is that some metals, such as
steel, will develop fatigue cracks if repeatedly stressed beyond their
"endurance limit", but if stressed less than that limit, they will
never fail, no matter how many times the stress is repeated.  BUT,
most metals, in particular aluminium alloys, have no such endurance
limit, and will eventually fail under repeated stress.  Aeroplanes are
designed for a certain number of landings and takeoffs, which result
in cycling of stresses.  Main components, such as wings and fuselages
should last the normal life of the aircraft without failure, but
should still be checked regularly for developing cracks.  Some early
737s used for frequent short-haul routes have had fuselage failures.

I hope this hasn't frightened you too much, but if worried about what
plane to fly in, look for something that has been in service without
failure for a couple of years, but not an ancient jet that is near the
end of its life.  (DC-3s are safe, as they aren't pressurised, and
wings, etc are low stressed.)

      Title: PRESERVED LEMONS
 Categories: Preserves
      Yield: 1 servings
 
      1 c  Sea salt
     24    Lemons
      8    Peppercorns
      4    Bay leaves
      4    Cinnamon sticks
 
  Place 2tsp of salt each into 2 sterilised 500ml jars. Select 12
  unblemished lemons & scrub them in warm water with abrasive cloth to
  remove wax [if bought. Home-grown lemons need less scrubbing.] Juice
  the remaining lemons.
  
  cut the washed lemons into quarters lengthways & across the flesh,
  without breaking the skin. In a bowl, rub the remaining salt into the
  skin & mix with your hands.
  
  Pack the lemons, skin side facing down, into the jars & fill each jar
  with the juice, ensuring that the lemons are all covered. Add the
  peppercorns, bay leaves & cinnamon & fasten the lids.
  
  Store the jars in a cool cupboard & turn each week. The lemons will be
  ready to eat in 6 to 8 weeks, then the skin is soft.
