MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Texas Ranch Chilli [Bubba-L]

      2 lb Lean beef
    1/4 c  Onion; minced
      3 cl Garlic; minced
      8 oz Tomato sauce
      1 ts Paprika
    1/2 ts Red pepper
      1 tb Flour
      6 tb Chile pepper
  1 1/2 ts Cumin seed
      1 ts Ground comino
      1 ts Oregano

  I do not put beans in chilli and most chilli aficionados
  don't either. It is a permissible side bowl..

  A little book, named *A Bowl of Red, The Natural History
  of Chilli* (Author not remembered at this time) deals with
  the origin of chilli, its folklore, and its contents,
  among other things. Very good book. (Frank X. Tolbert
  wrote this little bit of mis-information - UDD)

  Chilli is believed to have started in San Antonio, , on
  the plazas, "Chilli Queens," small cart enterprises.

  The Chili Appreciation Society International CASI, a real,
  deadly serious organization formed to promote chilli and
  keep standards, accredits competitive cook-offs. , The
  official international championship is located in
  Terlinqua, Texas in the Big Bend, near Lajitas. Terlingua
  is a ghost mining town in the foothills of the Chisos
  (Ghost) Mountains. Except during the time of competition,
  the population of Terlingua is around ten persons. I have
  a friend who judges the international competition. His
  chilli wagon he pulls behind his car has a sticker on it
  that says, "This chilli wagon stops for all road kills."
  That might tell you something else about ingredients If
  you put beans in chilli at Terlingua they will make you
  leave the state, or suffer worse condemnation. There are ,
  in my opinion, two commercially available genuine
  chillis--Wick Fowler's Two Alarm Chili, a seasoning
  packet; just follow the directions. Wick Fowler, now
  deceased, was a multi year champion chilli cook. Two
  Alarm, using all of the red pepper, is guaranteed to allow
  one to discover new sinus cavities. The hottest comes from
  the amount of red pepper; chilli powder is not hot; it is
  the important FLAVOR. The second commercial chilli is Wolf
  Brand Chili. It is genuine. and it has quite a legacy. It
  started in Corsicana, Texas and the entrepreneur traveled
  with his chilli wagon and had a caged wolf to attract
  customers when he pulled into town. Wolf Brand Chili is
  now owned by Pet Milk Foods.

  Brown meat; drain; sautee onions and garlic with meat. Add
  tomato sauce and 3 cans full of water. Now add chilli
  pepper, salt, red pepper, paprika, comino powder and seeds
  and oregano, crack comino seeds on a hard surface with
  back of your spoon. Stir in all ingredients until the
  color is consistent, bring to a boil, cover, lower to
  simmer and cook for 1 1/2 hours, or until the meat is
  tender. During the last 30 minutes thoroughly mix the 2
  tablespoons of FLOUR with two tablespoons of water. This
  "tightens" the chilli. Serves 4-6 normal people, 4
  gluttonous abnormal ones. It is extremely helpful the cook
  if he/she has two or three very very cold brewskis.

  Leon Hale, a Texas humorist, folklorist, tests the quality
  of his chilli; when has finished cooking he puts his "Bowl
  of Red" on the table and, before tasting it, walks around
  the table three times.

  He says that if he fails to perspire under his eyes, it's
  probably not very good.
