Oh. I don't associate with that sort of pretentious twit. So, I didn't "catch

I almost posted this bit when it happened - "Apr 12, 2012 – Ernie Edwards,
longtime owner of the Pig Hip restaurant along Route 66 in Broadwell, Ill.,
died in his sleep Wednesday night at age 94."

I met Ernie before the interstate passed by Broadwell and effectively throttled
his business. Interesting character - and he maintained enough local and
nostalgia (me included) trade to keep afloat until he was ready to retire. The
building/restaurant was a landmark on any Route 66 tour.

"Ernie Edwards, "The Old Coot on Route 66," served thousands of his "Pig Hip"
pork sandwiches from his restaurant before he closed the place and retired in
1990. But he and the Pig Hip didn't go away. Ernie turned the Pig Hip into a
museum about the Pig Hip (and Route 66), and ran it for another 17 years. It
burned down in 2007, but Route 66 fans placed a rock with a plaque on the site,
declaring defiantly that, "U.S. Route 66 'The Mother Road' Endures FOREVER." 

Other, homemade shrines to the Pig Hip dot the site, many of them featuring a
version of the Pig Hip logo: a big-bellied chef in an apron and frilly collar,
holding aloft a knife and a plate with a pork sandwich."

      Title: Pig Hip Sandwich
 Categories: Pork, Vegetables, Sauces
      Yield: 1 Serving

      3 oz Fresh ham; sliced thin
      1 sl Tomato
           Lettuce; shredded or leaf
           Pig Hip Sauce *
           Toasted, buttered bun

  Coat the bottom of the bun with Pig Hip Sauce. Place the
  slices of fresh ham on the sauce, add the slice of tomato,
  the lettuce, and top with the upper part of the bun.

  You may wish to spear the thing together with a long
  toothpick if it looks shaky.

  * Separate recipe

  Makes one sandwich.
