And people pay good money for something they can do at home for much
less. True, it does take some time to cut up all the meat & veggies but
still.............................! What can be done in an hour or so at
a much lower cost vs predone at an outrageous price; it boggles the
mind. The Fresh Market chain has a lot of those in its meat cases. It's
a bit of what I'd call a "yuppie" store anyway so I guess it makes sense
in its own nonsensical way.

You can get a 5 pound bag of potatoes for that price, sometimes 10
pounds, depending on the season. A couple of minutes with a scrub brush
and water, pop into the microwave and get the same result.

Steve keeps saying that too but my system rebels at too much of that in
a short time.

I tried something new (to us anyway) that made a hit with Steve. He
doesn't like mayo dressings on potato salad so I took a riff from what
some folks here have suggested. I had a bag of small Yukon gold potatoes
on hand so I sliced them into rounds and cooked them. After they were
tender, I drained them and poured some Italian dressing over them, let
them sit until they cooled down a bit. Meanwhile, I diced up some
Vidalia onion, celery & a couple of hard boiled eggs. Drained the
potatoes a bit, added them to the above. Then I mixed some Plochman's
spicy brown mustard (maybe a couple of tablespoons) with some mayo,
maybe about 2/3-3/4 cup aand mixed it into the potatoes, etc. Steve said
he liked the potato salad; it was a mayo based one that he could eat.
It's going to be a keeper for us.
