I wonder why, as mozz works so well and is fairly cheap.

Okay, if you put a good aged Cheddar on, I can see that being
a good thing, but I still don't see it working with the
traditional toppings.

When I made pizzas, it was always good old USA standard, tomato
sauce, garlic, oregano, plenty of mozz, and plenty of pepperoni.

MMMMM----- Recipe via Meal-Master (tm) v8.02

      Title: White Pizza
 Categories: Cyberealm, Italian, Main dish
      Yield: 1 pizza

      1 lg Italian bread shell
      2 c  Mushroom slices
    1/4 c  Butter, melted
      1 tb Grated parmesan cheese
      2 c  Shredded mozzarella cheese
    1/2 ts Italian seasonings
    1/4 ts Garlic powder
    1/4 ts Onion powder

  Preheat oven to 375F. Place bread shell on an ungreased 12 inch pizza
  pan. In a medium sized bowl, toss the mushrooms with the butter.
  Arrange the mushrooms over the shell, then sprinkle with parmesan
  cheese and mozzarella cheese, the italian seasoning, garlic and onion
  powders. Bake for 15-20 minutes.
