==================
-=> Hap Newsom said to Dave Drum <=-

-> Thanks for the report - but, I don't understand the "and the cooking
-> showed it" remark. At a rib-a-que, in my experience, nearly
-> everything is prepared in advance and dipped/sliced/plated to order.
-> So an absence of someone for a few hours should not make a difference
-> in the quality of the grub.
HN> I would consider that the normal way to
HN> run it...but Mr Porter may not have been
HN> there at all that day, leaving all the prep
HN> and such to his line cook (who SHOULD be
HN> qualified) and that may be where the
 HN> differences came in.

I'm not sure how they do it, but the sauces were definitely
overapplied (should have ordered mine on the side), and the
beef at least was dried out in places, bespeaking less than
perfect storage.

 ->  HN> his daughter's graduation. I had Ribs...pork ribs,
-> HN> and they were moist, falling off the bone and good.

As I am a firm rib person, I didn't take even the proffered
taste, until Hap came up with a nice chunk of gleaming jiggly
fat, which I took happily.

-> HN> Anne had Pulled pork, I had a taste and it was good
-> HN> as well. Our beans and rice all came a bit oversalted
-> HN> and it's the first time I've noted that (and it had
-> HN> to be pointed out by Michael and Anne as well). Corn
-> HN> bread was good, hushpuppies were gooooood! Fried

The cornbread was not super moist but at least to Hap's taste
unsweet. I didn't take a hushpuppy so can't speak, but the
okra was in fact quite good and a huge serving, which I
polished off to the last crumb - I even ate the piece of stem
that they gave me.

-> HN> okra was even nice. Michael got brisket with extra
-> HN> fat, and he seemed to enjoy it (you'll have to get
-> HN> his report to be sure) and as usual each one of us
-> HN> came away with a box of what we could not manage to
 ->  HN> eat!

And then I had half the contents of my box for breakfast one
day, and that was plenty.

 ->  HN> Having a great time with Michael here...tonight
-> HN> we'll be going out for CLAMSS!!! Last night we
-> HN> went out on a gizzard quest but came up empty....
 ->  HN> dang it!
-> Gizzards are best done at home anyway. Or in dirty rice. Bv)=

Fried gizzards are almost as messy as fried livers.

HN> I enjoy 'em any way I can get 'em and
HN> having someone else do the work is fine
HN> with me...sadly they were OUT of gizzards
HN> the night we were there and I kept ordering
HN> them the whole time we were eating our
 HN> "substitutes"...

For me, battered chicken drummettes, which were probably
from a Tyson bag but not bad. Anne and Hap had burgery
things - a patty melt on marble rye and a regular burger
respectively, which were supposed to be good but not so good
as to prevent Hap from losing interest and harassing the
waitress asking her to go find us some gizzards.

HN> The clams however were splendid! I think
HN> I took you to this place after the last
HN> picnic (not sure if we had clams though)
HN> Katie Downs, right on the waters of
HN> Commencement bay, a few blocks away
HN> from the small hidden park where we
HN> tried the first wines for the echo
HN> picnic. A pound of clams is a nice
 HN> appetizer and about 13.95 I think.

Good west coast Manilas (said to be called that not after
the Philippine place but somewhere closer), estuarine as
not very briny, almost totally free of sand and grit.
Each pound comes with a mug of somewhat mild and milky
broth (I suspect some kind of starch), a little thing of
drawn margarine, and two thick slabs of garlic toast -
which means I got four, all of which went back.

HN> Happy hour starts at 4pm and lasts
HN> until 6 (or so) and appetizers are
HN> half price...so instead of paying
HN> less for the pound of clams I order
HN> TWO pounds and get double the clams
HN> for the regular price...Anne got
 HN> Nachos without jalepeno...Michael

The nachos were very cheesy. I had a bite or three, as
we'd just gone to the Costco for 360 pills, which have
to get used up sometime. Standard, but what are nachos
sans peppers?

HN> and I each had two orders of clams

A bunch of clams, let me tell you, but they went away
quite fast, and I felt sort of like the walrus, or was
it the carpenter?

 HN> and split a pitcher of Mac&Jack's
HN> African Amber. We arrived at about

We should perhaps have had the beers by the glass, as
they'd be no more expensive, but I wasn't too eager to
waste more time waiting in the ever-lengthening line.
As it was I had what I estimate as 1/2 to 3/4 of a beer
too much (of course, if I had gone with the other plan,
I'd have had 1/2 a beer too little).

HN> 3:50 pm and the outide deck was
HN> fairly full but the inside seating
 HN> was almost empty...we got a great
HN> table by the windows and waited for
HN> official happy hour to start. By the
HN> time 4pm rolled around we were last in
HN> a pretty sizable line waiting to make
HN> our order at one of three cash registers.

Funny thing, there was this bunch of old folks hovering
around the register when we arrived, and we debated
joining them but thought it uncouth. No big thing, as
the line moved fairly fast.

 HN> oh it was goooooooood!!

Take his word.
