My first comment would be: "What would you expect from a fish that
pisses through its skin?"  However...

I think that you have been served old or mishandled shark. I've had it
very fresh (as in, right off the boat fresh) and it can be pretty good.
I've bought it a time or two at Stop & Shop and the quality has been
variable - I'm quite sure that shark needs to be handled like bluefish:
ice it right away, as soon as it's caught, or it gets nasty fast.

A couple of years ago, Roger and I went on a charter fishing trip for cod
out of Gloucester (commercial fishing for cod is outlawed, but charter
fishing with rod and reel is still allowed because the catch numbers that
way are dramatically lower.)  Anyway, the codfish were few and far between,
but dogfish (a small shark) were hitting out bait hard, no matter where the 
boat moved. And every time someone pulled a dogfish in, they'd unhook it 
and toss it back as "junkfish." 

After the third or fourth round of this, I told the deck hand to stop
chucking them back - I'd take them. There was a pool going for the largest 
fish, first caught, and most caught and I told the guy holding the money
that none of the dogfish would be counted toward my total - just count
the cod on my behalf. And I asked the deck hand not to chop the shark into
steaks, just gut them and head them and leave them otherwise whole for me.

I went home with the prize for first fish and biggest fish anyway, because
I hooked the first cod and no one else's that day outmeasured my first
fish. I only took home two cod, but two coolers full of dogfish, which I
packed in ice and finished cleaning and filleting when I got home (though
I did end up cutting at least one of them into steaks for the grill.)

That dogfish was delicious. The steaks were a lot like swordfish, though
a little "fishier" tasting, and the fillets cooked up beautifully no
matter how I cooked them - fried for fish and chips, broiled, grilled,
whatever. The anglers who were disgustedly giving their dogfish to the
crazy fat guy who obviously didn't know shit about fishing never knew
what they were missing.

I've also gone on charters out of Connecticut, but usually don't bring
home any dogfish. Connecticut charters often have a lot of Vietnamese
customers, and if they catch something not legally restricted, no matter
what it is, they keep it and eat it. I have great conversations with
them - we start out talking about how they cook that stuff, and by the
time we get off the boat we're drinking each others' beers, talking about
our kids and how shitty our jobs are, and like that.
