A long time ago, we used to grind our own beef.  Often used London broil
on sale for it.  Only problem was that it frequently came out TOO lean
and would not even hold together as a burger.


MMMMM----- Recipe via Meal-Master (tm) v8.05
 
      Title: Thai Beef Salad
 Categories: Thai, Beef
      Yield: 4 Servings
 
      1 lb Boneless ribeye steak
    1/2 c  Soy sauce
      1 ts Oriental sesame oil
      4 ts Sugar, divided
      3    Jalapeno peppers, stemmed,
           Seeded and minced
    1/4 c  Peanut oil
    1/4 c  Lime juice
      2 tb Thai fish sauce
    1/4 c  Coarsely chopped, unsalted
           Dry-roasted peanuts
    1/4 c  Sliced scallions
    1/8 c  Cilantro leaves, minced
      6 c  Thinly sliced romaine
           Lettuce or Nappa cabbage
           Tomato wedges, sliced
           Cucumber and carrot curls
           For 4 servings
 
  Rinse and dry steak and place in shallow dish.

  In small bowl, combine cup soy sauce, sesame oil and sugar, then pour
  over steak.  Marinate at least 1 hour, turning several times.

  Meanwhile, to make dressing in blender, combine remaining soy sauce
  and sugar, jalapenos, peanut oil, lime juice, fish sauce, peanuts,
  scallion and ciliantro. Process until nuts are finely ground and
  reserve.

  Grill steak over hot coals, turning once, until of desired doneness.
  Remove steak from grill and let stand 5 minutes.Slice thinly
  diagonally and place in serving bowl.

  Toss meat with half of dressing.

  Divide meat slices among 4 plates and ring with greens.Garnish with
  tomato, cucumber and carrots. Pass remaining dressing at table.
