Hi Carol,

 > Steve will use up his benefits with the fall semester. He'll graduate in
 > December with his MDiv. My classes were so reasonable in cost we paid

CS> Yeah, well we've stocked her as best as we can ad she should have
CS> enough for tuition and books for 2 years at their rate. Books I find
CS> can be cheaper on a mazon.com than the school place as well.

I think Steve bought most of his books thru Amazon, a good number of
mine as well. I know we got my Emily Post there. That, and Robert's
Rule's of Order for the Cmplete Idiot (or something like that) will be
worth their weight in gold, especially if Steve takes a pastoral
position.

 > Good thing Charlotte is gtting her associate's first; she'll get to go
 > in at a higher rank. Plus, it keeps her at home for a couple more years;
 > Mom & Dad won't say "no" to that, will they? (G)

CS> Grin, it's her life now. We recomend she stay and get some advanced
 CS> school. She seems agreeable.

I think I've reached my limit on advanced schooling. I don't know how I
did it but I got all A's (actually, 3 A+s and 10 A's). I do know it was
a lot of hard work and it will be a bit of a relief not to have to study
this fall.

CS> Yup. Talking with other diabetics, sometimes the charts do not show
CS> all so it's not a strict carb count or a glycemic index (how fast a
 CS> carb breaks down).

I'm trying to keep a sharp eye on the carbs but eat a balanced diet. So
far I've been lighter than I was on fruits but some tweaking will allow
me more as I get used to what's OK, what's not. I've been quite heavy on
raw veggies, somewhat less so but still high on cooked ones. Meats and
other proteins are basically (depending on prep, etc) carb free but I'm
not pigging out on them.

 > CS> We'vr found a new farmers auction place here. Some of us locals are
 > CS> going in on a box of stuff then splitting it.

 > Sounds like the state farmer's market down in Raleigh. A friend & I have
 > talked about going and splitting boxes but I'm not putting up this year,
 > anticipating moving after Steve graduates. Nice way to go if you're in
 > one place long term tho.

CS> Yup! LOcals meeting up there from time to time. We tell one another
CS> what we are wearing since it's often electronic coms among us (big
CS> crowd, 50-100 depending on night).

That's a good number of people! I buy for just the 2 of us (or plus our
life group if it's our week to cook) at the local market. A crowd like
yours, I'd go to Raleigh.

 > > I saw your meat sauce recipe--you're getting closer to real Italian
 > > cooking. I don't use lavender or rosemary in my Italian meat sauce but

 > CS> Still not italian but I'm happy with it! I'd add onion to it but
 > CS> didn't have a any that day nor green bells.

 > CS> Works though as a basic!

 > It's a good start! Need us to come up & give you another lesson in
 > Italian cooking?

CS> Snicker, I give you one in Asian! I make great authentic pork lumpia!
CS> I'd ha ve made it that cooking picnic but didnt want to stress anyone
 CS> (grin).

It would be fun if we could arrainge it some time. After this trip we've
a few weeks before classes resume for Steve but the days are filling up
with doctor's appointments and other such like. BTW, Steve is pretty
well over his pork avoidance but admits he'd rather have a ham than a
pork roast. Not an Aldi's ham tho; we got one around Easter time this
past spring and it didn't taste that great. Then too, we were spoiled by
the one we bought in PA last summer, local hog and local processing.
1000 or (more) times better. (G)
