      Title: Curried Chicken & Mango W/Toasted Almonds
 Categories: Poultry, Fruits, Nuts, Chilies
      Yield: 4 servings
 
      1 lb Chicken thighs; boned,
           - skinned, in bite-size
           - pieces
      2 ts Soy sauce + more as needed
      2 ts Mirin
      2 tb Olive oil + more as needed
      2 ts Yellow curry powder
      1 lg Yellow onion; in bite-size
           - pieces
      1 ts Minced garlic
      2 ts Grated ginger
    1/4 c  Dry white wine
      1 c  Chicken stock
      2 md Ripe mangos; in medium
           - cubes
    1/2 lb Snow peas or stringless snap
           - peas
      1 tb Champagne or sherry vinegar;
           - to taste
           Salt and pepper
           Cayenne or hot sauce
    1/2 c  Sliced almonds; toasted
 
  This dish has a slight taste of the tropics with a slight
  fruity balance of sweet-sour. A dash of cayenne or hot sauce
  will work if the wine has some residual sugar.
  
  In a small bowl, mix the chicken with 2 teaspoons soy sauce
  and the mirin; marinate at least 30 minutes.
  
  Preheat the skillet over medium-high heat, then add the oil.
  Add the curry powder and cook until it becomes aromatic
  (about 1 minute), then add the onions. Cook onions until
  they start to become soft and translucent, about 3-4
  minutes, then add the garlic and ginger. When the garlic and
  ginger become aromatic, add the chicken and more oil as
  needed. Once chicken has slightly browned (about 3-5
  minutes), add the white wine, chicken stock and mango. Cook
  until chicken is almost done and mango has softened and
  small bits of mango start to incorporate into the dish
  (about 3 more minutes). Add the peas and cover. Continue to
  cook a few minutes more, stirring occasionally, until peas
  are crisp tender.
  
  Season to taste with the vinegar, salt, pepper, and optional
  cayenne if using. Garnish with the toasted almonds. Serve
  with steamed rice and another side vegetable if desired.
  
  Serves 4
