 DS> We seem to be on a BBQ spree the past couple of weeks. Yesterday
 DS> Michael came to visit and we decided to try out Klobys. The address
 DS> says Laurel, but it is really in the new Maple Lawn subdivision which
 DS> is perhaps 5-8 miles to the west of downtown Laurel.

The name seemed familiar - then I remembered the rather
macabre play called The Visit (this is, if you haven't had
the misfortune of having encountered it, an absurdist drama
about the return of a rich lady to the town where she was
brought up, and is distinctly worth avoiding). Luckily, the
barbecue was better than the drama.

 DS> Gail had a pulled pork sandwich, with french fries on the side. She
 DS> pronounced that the pork was quite good -- but that the fries were
 DS> soggy and limp. Not the worst fries we have had, but close.

The funny thing is that my brother and I had recently had a
discussion, in which he offered the info that he liked soggy
fries - to which Dale jokingly suggested that we pack them up
for him.

 DS> I had a two meat platter. Brisket and ribs. The ribs were dry rub,
 DS> which is actually how I like them -- but the menu did not specify that.
 DS> The brisket was ok, a bit dry. For sides I had collard greens -- very
 DS> good, just a hint of vinegar, plus I ordered BBQ beans. I was expecting
 DS> something like Famous Dave's Wilber beans -- but what I got was beans
 DS> in a thin chili flavored sauce. NOT BBQ beans at all.

I had a nibble of pulled pork, which was decent, though my piece
had a big white bone cap in it, and a strip of rib meat, which
was tasty.

 DS> Michael ordered just brisket and asked for it to be extra fatty. What
 DS> he got was less than 1/4 fat -- so he asked for a side dish of *just*
 DS> fat -- which they gladly supplied.

My original order was actually less than 10% fat and seemed
to be not much different from Dale's slightly too dry serving
but for a thin ribbon of fat on top. While I waited for the
remedy to come out, I nibbled the fat off my portion and
ended up with Dale's serving almost exactly. The fat took a
bit to come out - I speculate they had to dig around the
garbage to find it -, but when it did, it fixed the situation
nicely. Seems that the brisket, fat on, is rubbed with a nice
dry rub, then smoked, then the fat is trimmed off and gotten
rid of. The underlying meat is thus dry and not great tasting,
but, as I discovered, the fat is excellent.

  Since he paid the check, I don't
 DS> know if they charged him extra for that or not.

They didn't; I would have complained if they had.

 One of his sides was
 DS> collard greens, which he ate (even though he is strictly a
 DS> meatitarian). His other side was chili. We exchanged tastes of his
 DS> chili and my "BBQ" beans and could hardly tell the difference. His
 DS> chili was mostly beans, with a little bit of meat.

The collard greens were cooked with pulled pork ends, so
they then became meat. The chili and beans were similar,
but the chili had a touch (touch) of cumin, and the beans
had a bit (large touch) of sugar.

 DS> Another feature of this restaurant is the companion ice cream shop
 DS> just next door -- with an interior connection. Gail and I shared a
 DS> butter pecan ice cream. It was as good as we've had, very rich and nice
 DS> flavor. Michael finished with a Guinness, and he seemed pleased with
 DS> that. 

Dale and Gail have a much greater knowledge of ice cream,
though ...

      Title: Honey Walnut Ice-Cream
 Categories: Desserts, 1941
   Servings:  8

      2    Egg yolks, slightly beaten
    1/2 c  Milk, scalded
    1/8 ts Salt
    1/2 ts Walnut flavoring
    3/4 c  Whipping cream
    1/2 c  Water
      1 c  Honey

  Combine egg yolks, milk, salt, water, and honey.  Chill.  Add flavoring and
  cream.  Cook over hot water until mixture coats a spoon. Pour into freezer.
  Freeze.  8 servings. The Household Searchlight
