Hops are a component of beer - and have been since there has been beer. They
act as a preservative. The German Reinheitsgebot, which dates from 1487,
sometimes called the "German Beer Purity Law" or the "Bavarian Purity Law" in
English, was a regulation concerning the production of beer in Germany. In the
original text, the only ingredients that could be used in the production of
beer were water, barley and hops.

Hops is like salt, or MSG, or garlic -- some folks think if a little bit is so
good then a LOT must be better. Which, as we all know, is not strictly true.

I don't mind a heavily hopped brew (mostly called "bitter") as the hops help
hold down the sweetness. But, Smithwick's is smooth and not overly sweet - so
does not need extra hops. But, all beer, as far as I can see, needs some hops.

      Title: Rosenkohl in Bier Gedunstet (Brussels Sprouts In Beer)
 Categories: Five, Vegetables, Beer
      Yield: 4 Servings
 
      1 lb Fresh Brussels sprouts
           Beer; any brand, to cover
    1/2 ts Salt
      2 tb Butter
 
  Trim and wash sprouts. Place in a medium-size saucepan and
  pour enough beer over them to cover. Bring to a boil,
  reduce heat and simmer for 20 minutes or until tender. Add
  more beer if needed, as liquid evaporates. Drain; add salt
  and butter. Serve hot.
