      Title: Cinnamon Shortcakes W/Plum Compote & Cinnamon Creme Fraic

  1 2/3 c  All-purpose flour
    1/4 c  Sugar
  1 1/2 tb Baking powder
    1/2 ts Salt
    1/2 ts Cinnamon; divided
      6 tb Cold, unsalted butter; in 6
           - slices
      1 c  Heavy cream
      1 tb AA sugar *

      3 tb Honey
      1    Cinnamon stick
      4 c  Pitted, thick sliced plums

MMMMM--------------------------TOPPING-------------------------------
    1/4 c  Creme fraiche
    3/4 c  Heavy cream
      1 tb Sugar
    1/4 ts Cinnamon
 
  For the shortcakes: Preheat the oven to 375øF.
  
  Mix flour, sugar, baking powder, salt and 1/4 teaspoon
  cinnamon together in a bowl and whisk to combine. Cut in
  butter with a pastry blender or two knives, or pulse mixture
  in a food processor, until the butter is the size of peas.
  
  Slowly add cream and mix until the dough just comes
  together, leaving about 1 tablespoon of the cream behind for
  the tops of the biscuits.
  
  Turn mixture out onto a floured surface and knead a couple
  of times until it is holding together. Gently pat down to
  1/2-inch thickness. Cut rounds out of the dough with a 2
  1/2-inch diameter biscuit cutter or ring mold, and place on
  a parchment-lined baking sheet. If dough sticks, dip the
  biscuit cutter into flour. Place biscuits on a
  parchment-lined baking sheet.
  
  Brush tops of the biscuits with remaining cream, and
  sprinkle with remaining 1/4 teaspoon cinnamon and the AA
  sugar (you may not need all of the cinnamon).
  
  Bake until the biscuits are light golden brown on top, about
  15-18 minutes.
  
  For the compote: In a medium-size saucepan, warm the honey
  and cinnamon stick over medium-low heat until barely
  simmering. Add plums, and toss to coat. Let simmer for about
  5-6 minutes, until the plums release some of their liquid
  and are warmed through. Remove from heat and set aside.
  
  For the topping: In the bowl of an electric mixer fitted
  with a paddle attachment, whip creme fraiche, heavy cream,
  sugar and cinnamon until soft peaks form, taking care not to
  overwhip.
  
  To assemble the shortcakes: Split biscuits in half, and
  divide fruit and its liquid among the bottom halves of the
  biscuits. Top each with a spoonful of the creme fraiche
  whipped cream, and cover with top halves of the biscuits.
  
  * AA sugar is a coarse sugar that can be found in the baking
  aisle of most well-stocked grocery stores. Granulated sugar
  can be substituted.
