That kind of technical talk is in one ear and out the other,
sorry. Even if it has practical importance to me I tend to
forget it.

We thought that, so for the second try, we used provolone
instead of the canonic Cheez Whiz, to the same effect.

That's most likely. Still, the amount of carb was objectively
pretty small, and the spike was objectively very large. I
suppose we could have forestalled the blood sugar issue by
serving some fibrous material (lettuce, Kleenex, etc.) alongside.

I've had that; it's nasty. As the cactus fruit has little
flavor of its own, they add almond and other stuff, making
it taste like maraschino cherries, which are tolerable in
context but an abomination otherwise.

Vegetable ragout with chervil

serves 4

8-10 baby carrots
3-4 baby turnips, peeled
2-3 baby zucchini
10-12 sm white onions and/or green onions, trimmed
6 Tb sweet butter
1 1/2 c broccoli florets or shredded cabbage
1/2 md red bell pepper, diced
1/2 ts olive oil
1/2 c cold water
1 ts lemon juice
s&p
1/4 c fresh chervil leaves

Slice carrots, turnips, and zucchini into similar-sized ovals. Place
these and the onions into separate saucepans with water to cover and
1 Tb butter in each. Cook until done, 3-7 min. Blanch cabbage or
broccoli in boiling water 1 min. Saute red pepper in olive oil for
1 min. Drain all vegetables.

Melt remaining 2 Tb butter in a large heavy pan. Saute carrots, turnips,
zucchini, and onions and saute for 1 min or until pale golden but not
browned. Deglaze with cold water and lemon juice. Add cabbage and red
pepper. Correct seasoning. Serve garnished with chervil.
