==================
Hi Michael,

RH> out she is walking once a day from her bed to the nurse's station and
RH> back. Not on week ends, not that great a distance but it's a start. Of
 RH> course she's using a walker.

ML> Better than nothing. Billy has (though fully self-conscious and
ML> motivated) managed to claw his way up from bedridden and moribund
ML> to walking all around the house, though he still doesn't get out
ML> of the house except to the doctor's. My friends who visited just
ML> now say they think he'll hang on for quite a while yet - I'll be
ML> back there soon, though taking a few days off first.

He has really improved over the last few months! A while ago, I didn't
think he would be hanging on much longer but I guess your visits (and
cooking) have kept him going. Now he needs to get out and socialise a
bit. (G)

ML> At the restaurants even if you get fried rice, other main
ML> courses are the norm. Fried rice is a way of getting into the
ML> diners' pockets is all. Not so at home, where as you know the
ML> stuff is an economical everyday main course, supplemented on
RH> We use it as an economical, clean out the fridge of odds and ends type

ML> Yep, that's the function I think it's meant to serve.

And I've done it quite well. It's never the same twice in a row, all
depends on what's in the fridge and pantry that need using.

ML> household where the protein is over here on the plate, and the
ML> starch is over there, and the greens are yonder.
RH> Greens were almost non exsistant most of the time when I was growing
RH> up. It was usually some veggie like corn, peas, beans, brussels
 RH> sprouts

ML> I'm amused that you don't count Brussels as greens. Not

I think of greens as salad stuff. Sprouts are in the non salad, veggies
category.

ML> surprised, though. What about other cabbagy things?

Rarely, usually just boiled cabbage on the occaisions when Mom did a
corned beef. Red cabbage only once that I can recall (I think she made
it more after I left home) with a venison sauerbraten that didn't go
over too well with most of my siblings--too gamey, so never repeated.
Broccoli, yes but not that often, same with cauliflower. She just wasn't
into the cabbage family; Dad didn't grow it so she didn't can/freeze it
& we rarely ate it.

ML> We're talking a few tablespoons here, not like a breakfast
 ML> glass of juice.
RH> She basically said none at all, except in the case of a low blood
 RH> sugar episode

ML> Strikes me as a bit extreme, but I don't know your case
ML> or your regimen. I know that I just had three mini-muffins,

I think she's a bit extreme; I'll ask my doctor next time I see her. My
diabetes is insulin controlled, fasting blood sugar numbers haven't even
hit 80 the last month or so. Had a 59 the other day, could have used the
OJ. 45-60 carbs per meal, 15 for a snack, 3 meals & one snack per day.

ML> one lemon poppy seed and two blueberry, and I expect the
ML> Glucophage to take care of them all plus the glass of juice
ML> I'll drink in an hour if I can't find a banana (preferred).

Bananas aren't my favorite fruit but I do eat (half of) one almost every
day to help the potassium level. Half a medium banana is 15 carbs, part
of a balanced breakfast. I usually have a starch and protein with it,
and tea.

RH> No, a tomato has very few carbs.

ML> I guess that's why people classify them as a veg rather than
ML> a fruit, though they are fruits. 1/3 of the sugar of an orange
ML> (though glycemically similar as oranges and the like have much
 ML> more fiber).

I'd rather have the orage juice, don't need the extra fiber as our diet
is fairly high in it normally.

ML> I had a plate of spaghetti and meat sauce (I am supposed
ML> to take the metformin with a small amount of starchy food)
ML> and put a teaspoonful of cayenne into my dish, and it
 ML> wasn't enough
RH> One teaspoon would have made it plenty hot for me.

ML> 1/4 ts would made it plenty hot for normal people, but
ML> my point is that I'm neither normal people nor aberrational
ML> from a taste point of view.

ML> Title: Instant Kimchi (Korean Gut Churi Kimchi)
 ML> 1 tb Sugar
RH> Similar to the recipe for quick kim chee I got from one of the
RH> farmer's market vendors. Now I'd probably sub some Stevia for the
 RH> sugar.

ML> But the sugar helps with the working more than the taste.

I know, I'll have to check how much it uses. We use the raw sugar but it
has almost as many carbs as the refined.

 ML> Catfish Gumbo
ML> cat: Louisiana, fish, main, soup, stew
 ML> serves: 6

I'll make it with some other kind of fish; we aren't fond of catfish.

Catch you later,
