MMMMM----- Recipe via Meal-Master (tm) v8.06
 
      Title: Filet of Beef with Oysters
 Categories: Oysters, Beef, Ham
      Yield: 2 Servings
 
           OYSTER CREAM:
      1 tb Butter
      1 ts Minced shallot
    1/2 ts Minced garlic
      2 tb Minced Westphalian ham
      2    Fresh oysters, shucked, with
           Their liquor
      1 tb White wine
      1 c  Heavy or whipping cream
    1/8 ts Curry powder
      1 tb Cold butter, cut up
      1 pn Each salt and pepper
           MUSHROOMS:
      2 tb Butter
      1 tb Minced shallots
        pn Minced garlic
      1 c  Oyster mushrooms
      1 pn Each salt and pepper
           And:
      2    Filets mignons (6 oz. each)
      1 ts Vegetable oil
        pn Each salt and pepper
      8    Oysters, shucked
      2    Bread slices, cut into heart
           Shapes, toasted
      1 tb Julienned country or
           Westphalian ham
           Snipped chives, for garnish
           Steamed French green beans
           And baby carrots
 
  Oyster Cream:  Melt butter in medium saucepan over low heat. Add
  shallot, garlic and ham; cook 6 to 8 minutes.  Add oysters with
  their liquor and wine; cook until almost all liquid is evaporated.
  Add cream and curry powder; increase heat to medium.  Bring to
  boil; boil until reduced to 1/2 cup.  Whisk in cold butter, salt
  and pepper.  Makes 1/2 cup.
  
  Mushrooms:  Meanwhile, melt butter in medium skillet.  Add
  shallots and garlic; cook 30 seconds.  Add mushrooms and cook,
  stirring, until tender, 5 minutes.  Season with salt and pepper.
  Keep warm. Meanwhile, preheat broiler and broiler pan.  Rub filets
  with oil; sprinkle with salt and pepper.  Broil 4 inches from
  heat, 4 to 5 minutes per side for medium-rare.
  
  Spoon 1/2 teaspoon Oyster Cream on each oyster and broil 1 minute.
  To serve, place filets on toast on 2 heated dinner plates. Arrange
  oysters around beef.  Spoon 2 tablespoons Oyster Cream on each
  filet and top with ham.  Spoon remaining sauce onto plates.
  Sprinkle with chives.  Serve with steamed green beans and baby
  carrots.

      Title: Gratineed Oysters with Diced Apples in a Calvados Sabayon
 Categories: Appetizers, Fruit, Oysters
      Yield: 4 servings
 
      1 c  Heavy cream
      3    Egg yolks, lightly beaten
      2 tb Calvados
     16    Oysters in the half shell
      2    Apples; peeled and finely
           - diced (reserve in cold
           - water with the juice of
      1    Lemon
 
  In a small bowl place the heavy cream and whisk it for 3 to 5
  minutes, or until it is softly whipped.  Add the egg yolks and the
  Calvados, and whisk them in.
  
  In each oyster half shell place the diced apple.  Place the oyster
  meat on top.  Cover it with the cream mixture.
  
  Place the oysters on a flat sheet and broil them for 1 to 2
  minutes, or until the cream mixture is golden.
