According to the Mass. Fish and Wildlife department,
mass.gov/dfwele, wild turkeys can fly about 1/8 mile
and have been clocked at speeds exceeding 50 mph.

The Beltsville-origined turkeys of which we are most
familiar have been bred to be boobs.

CAPE COD TURKEY
cat: fish, main
servings: many

1 lb dried salt cod fish
7 lb potatoes
1/2 lb fat salt pork
salt and fresh ground pepper
2 qt whole milk
all-purpose flour as needed
1/4 lb butter or margarine
h - Optional accompaniments
1 lg onion
6 hard boiled eggs
sliced beets
1 Tb granulated sugar
1/2 c cider vinegar
hard rolls

Freshen cod fish according to instructions on the box.
Simmer slowly for 2-3 hr, changing water if fish is too salty.

Cut salt pork into 1/4" cubes and fry until brown and
crisp. Drain well on paper towels. Peel and boil the
potatoes. In a saucepan bring all but 2 c ofthe milk, with a
tablespoon of butter, almost to a boil. Mix reserved milk in
a shaker with flour. Slowly stir this into the hot milk to
cook and thicken it into a white sauce. When potatoes are
cooked, drain and put into a lg deep platter. Break up
potatoes with a fork, mashing slightly but leaving some
lumps. Spread with butter and lightly salt and pepper. Drain
the cod fish and break it up into shreds. Spread this evenly
over the potatoes. Pour the thickened white sauce over the
fish and potatoes to cover. Extra white sauce can be served
in a pitcher.

The pork scraps can either be sprinkled over the cod fish
and potato platter, or served in a separate dish. To prepare
optional accompaniments: Early in the day, hard boil the
eggs and refrigerate. Peel, slice in half, and place around
the edge of platter. Also early in the day, peel and chop
the onion into 1/8" x 1/4" pieces. Put into a bowl with
salt, pepper, sugar, and cover with vinegar. Mix, cover, and
refrigerate. Sprinkle over each serving to taste. Sliced red
beets make a colorful addition to the meal.
