I resent very much my younger co-workers persuading me to give up my
perfectly fine G2 phone for a super deluxe G4 phone, whose extra
features I don't use or even understand. (I did not get an iPhone
but an equally high tech, almost as expensive, Samsung Galaxy.) I
also regret not buying Samsung stock. If I had listened to Neekha
and traded stock as she traded up phones I would have bought Nokia
early on, then RIM (the Blackberry maker), then Apple and now
Samsung for a 9000% ROI. (I also would have bought Disney and Mattel
and done not too badly there either. She should be a gunslinger for
a big time mutual fund.)

     Title: Mixed Wild Mushrooms With Prosciutto On Arugula
Categories: Wild, Mushrooms, Ham, Cheese
  Servings: 4

      1 lb 1/4" thick sliced mushrooms,
           your choice, pick of the day
      2 TB unsalted butter
      4 TB extra virgin olive oil,
    divided
      1 ts kosher salt
    1/2 ts freshly ground black pepper
      3 bn fresh arugula, washed and
    spun dry
      6 sl good Italian prosciutto
      2 TB sherry wine vinegar
      1    Chunk of Parmesan cheese
      8    sun-dried tomatoes,
    julienned
    Fresh flat-leaf parsley
    leaves

(If using large boletes or puffballs, slice thinly and cook until
well-browned so it gets a bit crispy)

Arrange the arugula on 2 large plates or bowls, and cover each
portion with 3 slices of prosciutto.

In a large saute pan, heat the butter and 2 tablespoons of the olive
oil until bubbly. Add the mushrooms, salt, and pepper to the pan,
and saute for 3 minutes over medium heat, tossing frequently. Reduce
the heat to low and saute for another 2 to 3 minutes, until cooked
through.

When the mushrooms are cooked, add the sherry vinegar, wait a moment
and scrape pan w/spatula to deglaze, then and the remaining 2
tablespoons of olive oil to the hot pan. Spoon the mushrooms and
sauce on top of the prosciutto. With a peeler, add large shavings of
Parmesan cheese and place on top of the hot mushrooms. Sprinkle with
the sun-dried tomatoes, parsley leaves, salt, and pepper, and serve
warm.
