When I set up the lease for a Curves gym, I learned that just two
franchises had been given permission to charge more than the going
North American rates. They were Yellowknife (fairly expensive
everything) and Manhattan (very expensive rents).

That IS a lot.

I didn't remember any liquor bargains, other than that the premium
on high end booze was relatively light, as the taxes are based on
the alcohol content rather than the base price. So $8 wine may be
$15 but $200 wine is only $207. I see that as an elitist attitude
that discriminates against the street people and other desperate folk.

In the food dept our proximity to Alberta helps a bit on beef, pork
and cheese prices and our currently strong Canadian dollar helps on
California produce.

     Title: Tofu With Mushrooms, Spinach, And Fermented Black Beans

  Servings: 4

  1 1/4 lb block firm tofu, drained
      3 TB vegetable or canola oil
      4 oz button mushrooms, stems
    discarded, thickly sliced
      3 md cloves garlic, minced
      2    fresh red chilies (such as
    Thai bird), stemmed, thinly
    sliced
    1/4 ts salt
      3    scallions, chopped
      3 TB fermented black beans
      1 c  chicken broth
    1/4 ts dark soy sauce
  1 1/2 c  baby spinach, chopped
    3/4 ts cornstarch mixed with
      1 TB water in a small bowl
      2 ts chili oil

Dry the tofu slices with paper towels, and then cut into 1/2-inch
thick rectangular slabs. Heat oil in a large wok over high heat
until just starting to smoke. Add the tofu slices with tongs. Cook
until golden, flipping occasionally, about 3 minutes. Transfer tofu
to paper towel-lined plate to drain.

Return the wok to high heat and add the mushrooms. Cook, stirring
and tossing occasionally, until mushrooms release their liquid and
start to brown, about 4 minutes. Add the garlic and chiles and cook,
stirring constantly, until fragrant, about fifteen seconds. Add the
fermented black beans, and stir-fry until they are hot, about 30
seconds. Add the broth and soy sauce.

When mixture comes to a simmer, reduce heat to medium, add the
spinach, and cook until it wilts, about 15 seconds. Season to taste
with salt, if necessary. Stir in the cornstarch and water mixture,
and cook until the liquid thickens. Add the scallions, stir well,
and then remove from heat. Add the chili oil. Serve immediately with
rice.
