Then you are more expert than me and as it is more technique than
recipe I won't even try to supply any recipes. I'll just add that
the best chickens I ever did were over cherry wood.

But I can address this. You can't do it in the smoker 100% as the
beans need soaking and long simmering before they can be baked. But
you can certainly finish the beans in a smoker instead of an oven.
Take your favourite recipe for Boston baked beans or barbecued beans
in tomato sauce and add lots of smoked meats: double smoked bacon,
leftover pulled pork or chopped brisket including the burnt ends and
fat trimmings. Go with about 2 hours in the smoker in an open pan at
around 250-275 F. The pan will get cruddy on the outside so you
will want a dedicated pan for this job or use disposable aluminum
turkey roasters or lasagne pans.
