      Title: Warm Turkey Salad w/Poached Eggs & Bacon
 Categories: Poultry, Pork, Eggs
      Yield: 5 servings

      6 lg Eggs
           Salt
      1 ts + 1 tb red wine vinegar
      3 sl Bacon
    1/4 c  Chicken broth
  1 1/2 tb Olive oil
           Fresh ground black pepper
      2    Hearts of Romaine; sliced in
           - ribbons
      2 c  Cooked turkey; in 1/2" X 1"
           - pieces

  This recipe is pretty rich because of the bacon. If you
  are serving it to six, poach six eggs so that each diner
  gets one on her plate. Serve with bread or top with
  croutons.

  Fill a wide shallow pan with water to a depth of 3-4
  inches. Season water with salt and 1 teaspoon vinegar.
  Break the eggs into separate ramekins or small bowls.
  Bring the water to a simmer, cover and keep on low.

  Meanwhile, place the bacon in a skillet and cook over
  medium heat until just crisp, about 10 minutes. Remove
  from the pan and drain on paper towels. Allow to cool then
  break or cut into 1-inch pieces. Drain all but 1/2
  tablespoon of the bacon fat from the pan.

  Add the chicken broth to the bacon pan and bring to a
  simmer, scraping any brown bits from the bottom. Remove
  from the heat and add the remaining 1 tablespoon vinegar
  and the olive oil. Season with salt and pepper to taste.
  Leave dressing in pan.

  About 6 minutes before serving, start poaching the eggs:
  Use a chopstick to vigorously stir the water in a spiral.
  Add 1 egg to the water, then quickly repeat with remaining
  eggs. Poach until yolk is starting to set but is still
  runny, about 4 minutes.

  Place the lettuce and turkey in a large bowl. Pour the
  dressing over the salad, then add the bacon and toss until
  well incorporated.

  Distribute the salad among plates and top each with a
  poached egg. Grind more pepper on top and serve.

  Serves 6 as a starter; 4 as a main course
