I've down the 18 and then gone on to an after hours house party more
than once but that was decades ago. 3 or 4 suits me just fine these
days.

They are a variety of flat Cantonese egg noodles made from wheat
flour. They are known for their golden yellow color and chewy
characteristics. The slightly chewy and slightly spongy texture of
the noodles is due to the soda water used in making the dough (as
opposed to regular non-carbonated water).

The noodles are available in dried form in plastic packages. They
come in the form of flat patty-like dried bricks. The processing
involves the fresh noodles being fried, then dried into this form.

The noodles may be cooked a number of ways. They are boiled first,
then can be stir fried or used in soups or salads. Good noodles
maintain their elasticity, allowing the noodles to stretch and
remain chewy.

Traditions: When Yi mein is consumed on birthdays, it is generally
referred to as Longevity noodles or Sau mein. Braised E-Fu Noodles
is a classic dish often served in Chinese banquets and formal
dinners because since the older days they have been regarded as
quality noodles.

Nomenclature: mian (mien or mein) refers to noodles made from wheat,
while fen or fun refers to noodles made from rice flour, mung bean
starch, or indeed any kind of starch.
