You're exactly right.  With the "ol" sugar alcohols, at least with me, if I
have too much of them, well, to be nice, I can't leave the house for a few
hours. :)  The "ol" sugar alcohols are absorbed much more slowly and don't
cause your sugar to spike as quickly as hard.

I can understand where you're coming from with my own experience.
Unfortunately, from all of the stuff I've read and talked to others about, it
seems that stevia affects everyone differently.  I don't have any
problems--maybe it's my taste buds are just dying off--but I know many others
that don't like it just for that reason.

It's tough finding a natural sugar substitute.  It's like cilantro: I happen to
love it but I know several people, including a few in this echo, who detest it
because it tastes "soapy" when I can't taste that.

There's one brand sold at Earthfare (a regional natural/organic food store
chain that was very good but I can't remember the name now.

Sugar's chemical structure is very necessary in baking.  You just can't bake
right without some sugar in a baked good which is why Splenda is available in a
"half and half" mix with cane sugar for baking.  The agave nectar is something
I've used on a limited basis but from what I've used of it, it's pretty good
for sweetening tea and liquid stuffs.  I've yet to try it in cereal or oatmeal,
but I'd think that with at least oatmeal the agave nectar would make sense.

Good luck on your hunt for something sweet.  It's not easy. :(

MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Basque Shepherd's Pie
 Categories: Eggs, Breakfast, Vegetables
      Yield: 4 Servings

      4 ea Slices Bacon
      3 ea Med. Potatoes
      2 ts Sliced Green Onions/tops
      1 tb Snipped Parsley
    3/4 ts Salt
    1/8 ts Dried Thyme, Crushed
      1 x  Dash Pepper
      4 ea Large Eggs

  In 8-inch skillet coo bacon until crisp; drain, reserving 2 T of
  drippings. Crumble bacon and set aside.  In same skillet combine
  reserved drippings, peeled, thinly sliced potatoes, onion, parsley,
  salt, thyme and pepper. Cover tightly; cook over low heat til
  potatoes are barely tender, 20 to 25 minutes, stirring carefully once
  or twice.  In small bowl beat together eggs and milk; pour over
  potato mixture.  Cover and continue cooking over very low heat til
  egg is set in center, 8 to 10 minutes. With a wide spatula, loosen
  sides and bottom and slide potatoes out onto serving plate, or serve
  from skillet.  Sprinkle crumbled bacon atop. Serve hot.
