      1 c  Sour cream
    1/4 c  Whole milk
           Zest of 1 lemon
      3 tb Fresh lemon juice

      2 bn Radishes; trimmed
      2    Heads Belgian endive; halved
           - cored, separated into
           - leaves
      1    Head frisee; trimmed of
           - outer green leaves, cored
  3 1/2 oz Pkg radish sprouts
      5 tb Fresh lemon juice
      2 tb Extra-virgin olive oil
           Salt & pepper

      3 tb Butter
      2 md Yellow onions; fine diced
      2 c  All-purpose flour
    1/2 c  Chopped fresh mixed herbs
  1 1/2 tb Baking powder
      1 tb Ground black pepper
      1 ts Salt
  1 1/2 c  Milk
      2 lg Eggs; room temp
    1/3 c  Melted butter
           Vegetable oil to grease
           - waffle iron
    1/4 lb Thin sliced smoked salmon or
           - gravlax

  This dish was originally served at San Francisco's Kelly's
  Mission Rock, which is now closed. The waffle part of the
  equation is easy for the home cook. First, caramelized
  onions are added to the waffle batter. Then, when the hot,
  crisp waffle comes off the iron, it's paved with smoked
  salmon and drizzled with lemon cream. The waffle is
  crowned with a well-dressed knob of frisee, endive, radish
  sprouts and radishes.

  Make the Lemon Cream: Whisk sour cream, milk, lemon zest
  and lemon juice in a small bowl. Refrigerate until ready
  to use.

  Make the salad: Thinly slice radishes on a mandoline.
  Combine radishes, endive, frisee and radish sprouts in a
  large bowl.

  Whisk lemon juice and olive oil. Season with salt and
  pepper. Set salad and dressing aside.

  Make the waffles: Melt 3 tablespoons butter in a large
  skillet over medium heat. Add onions; saute until golden
  and caramelized, 7-10 minutes. Cool.

  Combine flour, herbs, baking powder, pepper and salt in a
  large bowl. Combine milk, eggs and melted butter in a
  separate bowl. Fold wet ingredients into dry ingredients,
  being careful not to overmix. Fold in onions. Batter
  should be slightly lumpy.

  Heat a waffle iron according to manufacturer's

  instructions. Brush griddle lightly with vegetable oil.
  Cook waffles until golden brown, 3-5 minutes. Keep waffles
  hot while you cook remaining ones. Brush griddle with oil
  between each waffle.

  Place a waffle in the center of each of 6 plates. Drape
  salmon on the waffles around the edges. Drizzle with lemon
  cream. Toss salad with dressing. Top each waffle with some
  salad.

  Serves 6.
