MMMMM----- Recipe via Meal-Master (tm) v8.06

      Title: Fresh Tomato Sauce
 Categories: Sauces, Vegetables, Herbs
      Yield: 9 servings

  6 1/2 lb Ripe tomatoes
    1/2 c  + 1 tb olive oil
    3/4 lb Onions; in small dice
      3 lg Garlic cloves; minced
  1 1/2 ts Salt
     12 lg Basil leaves; bruised
           Fresh ground pepper

  This amount of olive oil gives the sauce a wonderful
  velvety-rich texture. When the sauce is refrigerated, the
  oil rises. Thoroughly stir the sauce before using it so
  the oil is well distributed.

  To peel tomatoes, cut an "X" in the blossom end of each.

  Working in batches, plunge tomatoes into boiling water for
  12 seconds. Transfer with a slotted spoon to a bowl of ice
  water for 3 minutes. Remove from water, cut out stem and
  peel off skin.

  Cut tomatoes in half, squeeze out and discard seeds, then
  finely dice.

  To make the sauce, use 2 large, heavy saute pans or make
  the sauce in 1 pan in 2 batches.

  If using 2 pans, place over high heat until hot.

  Add 4 1/2 tablespoons oil to each pan. Heat until oil is
  rippling. Add half of the onions to each pan. Saute,
  stirring constantly, for 1 1/2 minutes.

  Add half of the garlic to each pan; saute, stirring
  frequently, until garlic is fragrant and onions are limp
  but not colored, about 2 minutes.

  Add half of the tomatoes, salt and basil to each pan,
  stirring to blend thoroughly.

  Bring to a boil over high heat. Reduce heat to medium-high
  and simmer, uncovered and stirring occasionally, until
  tomatoes are cooked but still retain their freshness and
  form a sauce that thickens slightly, about 15 minutes.
  Season lightly with pepper.

  Reserve 3 cups of the sauce for the Weekend Recipe. Cool
  remaining sauce to room temperature, then cover and
  refrigerate for up to 5 days. Remove the basil leaves from
  the sauce as you use it.

  Yields about 9 cups.
