      Title: Lightly Curried Pasta Salad

      2 ts Yellow curry paste *
  2 1/2 tb Extra virgin olive oil
      4 tb Distilled white or cider
           - vinegar
    3/4 c  Mayonnaise

MMMMM---------------------------SALAD--------------------------------
    1/4 c  Currants
      8 oz Small pasta
    1/2 c  Fine diced red onion
  1 1/2 c  Fine diced celery
      1 c  Halved grapes
           Salt & pepper
    1/2 c  Slivered almonds; toasted,
           - garnish
           Chopped parsley; (opt
           - garnish)

  Use leftover rotisserie, grilled or roast chicken instead
  of pasta for a great curried chicken salad. Make only half
  the dressing for 2 cups of boneless, skinless, chopped
  chicken; less celery and onion will be needed as well. For
  a stronger curry flavor, increase the amount of curry
  paste.

  For the dressing: In a small pan over medium heat, fry the
  curry paste in the olive oil until the curry starts to
  look "granular" and becomes aromatic, about 1-2 minutes.
  Place the paste and oil in a small bowl to cool, and then
  whisk in the vinegar and mayonnaise. The dressing can be
  made ahead and refrigerated.

  If making the salad ahead, increase the dressing recipe by
  half. The pasta absorbs the dressing and often needs
  moistening before serving. Reserve the grapes to fold in
  at the last minute.

  Assembly: Soak the currants in hot water until softened,
  about 15-30 minutes; drain and set aside.

  Cook the pasta according to package directions; drain and
  cool. Put pasta in a large bowl along with the onion,
  celery and grapes, if using. Fold in the dressing; season
  to taste with salt and pepper.

  Garnish with toasted almonds and parsley, if using. Serve
  chilled or at room temperature.

  * Note: Mae Ploy, a good brand of Asian yellow curry
  paste, can be found in many Asian markets and large
  grocery stores.

  Serves 10-12 as a side dish
