I can't see a world in which I would have the choice not to. I
can't even decrease the incidence of lung cancer by discouraging
people from smoking; how could I decrease the incidence of
Alzheimer's by discouraging people from atrophying their brain?

But the lazy choice has a long-term effect on the marketplace
and by extension the likes of me: the more "requirements" you
have the more "features" clog up the machines, operating systems,
Web. Those of us who prefer less fanciness are put out; those of
us who can afford less fanciness are disenfranchised. So I feel
I have license to lecture you, though you have license not to read.

You think that buying the stuff is that much more convenient
than making it. So I guess I won't disagree - I'll just say
that you're just plain wrong. Anyone with a modicum of
experience can do it extremely easily. And a good pasta machine
is cheaper than the most dodgy automobile!

 And have fun cleaning up the
 DD> mess from making the pasta fresh, while you're at it.

Five minutes, cheese!

FETTUCINE ALFREDO
cat: pasta, rich, extremely easy
serves: 2

1 c heavy cream
2 Tb sweet butter
3/4 c freshly grated parmesan
pepper
1/2 lb fresh fettucine

Bring the cream and butter to a boil in a saute pan. Reduce
heat and simmer 30 sec. Add half the parmesan, a little freshly
ground black pepper, whisk until smooth, and remove from the
heat. Cook the fettucine and add to the cream. Add the rest of
the parmesan, toss the noodles well in the sauce and serve
immediately.

Note: Don't try substituting the grated cheese that comes in a
can. It won't melt.
