Hi Ruth...

If the Pasta had just plain sauce, What makes a big difference is the
protein and the fats. the Sandwich will not only raise Your sugar with
its carbs ( even if it is less carbs than in the pasta), but will
prolong it with the protein ( because that will turn to sugar too, only
much more slowly ) in the chicken, and then throw in the Fats from the
fried chicken and You not only have the spike as You would with the
pasta, You have two other ingredients which will prolong the spike even
if one used the same amount of insulin and or the body was doing it
naturally, it will be higher. If You ate some rice with lets just say,
some I can't believe it is not butter spray on it. And then You had had
the same amount with Butter. That good ol butter is going to make it
act much differently. Not only that, but with protein and/or fats, from
even another meal earlier in the day, it will affect those carbs, due to
the amount of time it takes to metabolize them. Metabolization of the
proteins is much slower in turning it to sugar. I can't prove it, but I
have read that there have been studies that some people who eat heavily
on fat on like Thanksgiving, which is not hard to do. They can still
find some of that fat in the system, unmetabolized 2 days later.
