Ärende: Wild Mustard 778

 DD> You asked what ever became of "wild mustard". So, I went off looking,

I was unaware of Sinapsis, though it makes sense as the
Italian word for mustard is senape. I always thought that
all mustards, broccolis, cabbages, and so on were Brassica.

 DD> Anyway, the short answer is urbanisation and farmers.

There used to be this plant with yellow flowers and thin
little green seed pods that, when crushed, yielded a
yellow liquid that stained persistently. The smell was
very mild but perhaps a little peppery-mustardy. At the
time I was nowhere near so culinarily adventurous as now
so never thought to do something rash like take a taste.
I always used to encounter it in vacant lots and meadows
and don't see it around much any more; wondered if its
scarceness had something to do with climate change.

Mexican Wheat Chili
cat: not chili
Serves: 8

1 c wheat kernels
2 lb hamburger
1 Tb olive oil
1/2 ts ground mustard
2 Tb chili powder
1 1/2 ts cumin
1/2 ts cardamom
1 onion, chopped
1 lb mushrooms, roughly chopped
4 tomatillos, husked and chopped
1/2 c water
2 c broth
1 cn tomato juice
1 16-oz cn tomato sauce
4 chipotle peppers, with adobo sauce
1 Tb dried cilantro
2 limes, juiced

1. Soak kernels in a crockpot, in water, overnight on low. Drain.

2. Brown hamburger and onions.

3. Combine oil and spices in a large dutch oven. Place over high
heat until spices sizzle.

4. Add mushrooms, tomatillos and water. Cover and cook till
vegetables are juicy, stirring occasionally. Uncover and
continue to stir till juices evaporate.

5. Add broth, tomato juice and tomato sauce and peppers. Mix well.

6. Combine wheat and hamburger in a crockpot. Add vegetables and
sauces. Cook on low for 8-10 hours. Add lime juice and cook for
2 more hours.

7. Serve with sour cream and cheese.
