I know, I have problems with strong smells and it seems a lot of the
cleaning products have them. I also don't like the fact that I'm paying
for mostly water in them. I've tried a number of earth friendly
products, found some I like (Whole Foods laundry detergent) and others I
don't (same chain, fabric softener). We use a mix of natural and
chemical cleaners, depends on the job that needs doing and who's doing
it.

If it has crystals in it, it's well aged. Right now our fridge has a mix
of NY State extra sharp and Dakin Farms (a Christmas gift) cheddar. It
also has feta, Swiss, Parm-Reggiano, Peccorino-Romano, mozzarella and
probably a couple of others.

The taste is worth it! I started doing it years ago, used a bread
machine for a while and went back to doing it by hand when we got a
Kitchen Aid mixer a few years ago. It takes about half an hour of actual
hands on time--about 20 minutes to mix/knead, then it rises for an hour
or so (you can be doing other things in that time), 10 minutes or so of
punching down & shaping, another hour of rising time and about half an
hour of baking time. You can also slow down the rise time by putting the
dough in the fridge for either first or second rising.
