They're not supposed to leave the lungs in, for silly
reasons. Lungs taste fine, and the health issue seems
to be bogus. Why some regulators picked on this particular
organ, ignoring kidneys, rectums, and so on, is a mystery.
It is said that fear of tuberculosis was the issue, but
it seems to me to be a big case of wtf.

This recipe looks as though it would work with just about
any meat.

Creamed Lung
cat: offal, main
servings: 8

1 kg beef or veal lungs
2 c double cream
2 Tb good quality vinegar
- (spirit or white wine)
1 white onion
2 shallots
2 Tb unsalted butter
3 Tb plain flour
4 bay leaves
6 whole black peppercorns
4 pimento (allspice) balls
salt

Clean the lungs properly and get rid of the sinews.
Place clean lungs into a large pot and cover with
salted water. Allow to rest 1 hr. Replace the water
in the pot and season with salt, 3 bay leaves,
allspice, and black peppercorns. Peel onion and add
into the pot. Place the pot over high heat and bring
liquid to the boil. Turn the heat down to medium,
cover the pot with lid, and simmer 1 hr or until the
lungs are nice and soft. Set aside, take the lungs
out of the stock, and allow lungs and stock to cool.

In a sauce pan melt the butter over medium heat.
Finely chop shallots and add to the butter. Sweat
for few minutes and add flour. Work the mixture to
combine the flour with butter well. Add in 500 ml
cool stock and mix well (we don't want any lumps of
flour). Add last bay leaf and vinegar. Cook over
medium heat for 20 min. Add cream and season with
salt and pepper to taste. Cook until thickened to
sauce consistency. Add in diced lungs, heat through,
and serve with dumplings.
